I make a "loaded" baked potato sald. Start with any standard potato salad (including sotr bought) and add crumbled bacon, shredded chedder/colby cheese and any other ingredient that you might put on a loaded baked potato. My family loves it!

chunked, boiled potatoes, salt and pepper, chopped onion, chopped celery, mayo and apple cider vinegar.
