Why do they need reservations to eat?

Some Restaurants are now requiring reservations to eat there. Why?

It's high season so people make reservations in advance and the restaurant fills up. If walk up seating is available I'm sure they'd be more than happy to seat you.

So many other people make dining reservations that they fill up and do not have availability for walk-ups.

I don't understand your question, I think.
Disney offers the Opportunity to make Advance Dining Reservatioons (ADRs) 180 days in advance for folks who wish to make them. For the popular in park and resort restaurants they frequently fill to capacity by people who want to assure they can eat in that restaurant, on that day, at that time.
I don't know of anywhere (except maybe V & A's ??) that requires reservations. It is just that they fill with people who make them, so it because necessary.
Is that what you are asking?

Please post which ones?.............as I am sure all WDW restaurants take walk ups when tables are available.

Why? Because they are filled and all booked up. They don't have open tables so if you didn't make an ADR (reservation) they don't have space for you.

I guess it is maybe to warn people who pre pay the dining plan not to expect to be able to walk up.

We checked in to BLT in February Presidents week and as we were checking in there was a cash guest checking in beside em who had bought the Deluxe Dining plan. I heard her asking where was the hotel restaurant and she was really shocked to find BLT didn't have one and that the Contemporary wasn't expecting to have much in the way of places as CG was closed, CM fully booked leaving the Wave. Some people expect to do at Disney what you can do at regular chain hotels which is turn up an figure it out day by day. In peak season that would lead to a lot of disappointments at WDW especially for those who pay in advance thus can't say ok it's busy i'll just go offsite.
