MCO is a very user-friendly airport, with a number of nice restaurants, a hotel adjoining a beautiful atrium, gift shops of all kinds, etc. I don't think you'll have a problem finding things to do for a couple of hours.

We have two young children, and after cruising on Carnival then on Disney, I doubt we'll ever cruise on anything except DCL again until our children are much older. Not that we didn't enjoy the Carnival cruise, but the Disney experience was much more organized, relaxing, and detail-oriented...
