You could do a private dinner at the Grand Floridian on the beach or the balcony of a room during the Fireworks. You can also do a private dessert party during illuminations. The prices are pretty reasonable too. There's information about it on the Restaurant board with contact info for both...

It's normally just random showers in the afternooon/evening. That's summertime in Florida every year until about October. Some days are worst than others, but being a little inland, it's not as bad at Disney as it is by the coast.
