Hello, I had done swimming with dolphins several times in Hawaii. However, I highly recommend take a day cruise to see these beautiful creatures in their natural habitat. There is nothing compared to seeing them swimming freely with their pods in the vast ocean. :)

There are some non-profit animal shelters (eg. humane society) also offer birthday parties. The kids will have a blast - they get to visit with the dogs and cats, tour, lessons about animal care, responsibility, etc. :) I highly recommend it if your place has such facilities!
