#1 - I haven't seen any official policy concerning heelys and I've never had a problem with them. I don't see too many of them and they certainly have never run into me. I have more problems with people shoving and pushing just to get ahead.

as long as they don't have a date stamped on them, you can use them anytime. We always buy in advance and just carry it around - you never know when you might need them.
when we go to the AMC at Pleasure Island, the Saturday morning shows are always the least crowded. I wouldn't go on a Friday or Sat night, those are zoos. The Sat mornings at 11am are quieter and they're much cheaper since they're still at matinee prices.

when you get to the theater, just enter the building and there are kiosks right at the entrance. You swipe your credit card and follow the directions. Done!
that is correct. In order to get DDP you have to purchase a package - which means you pay for room & tickets (even if it's just a one day base ticket). This is true both paid or free DDP.
However, if you have APs, you can apply the unused ticket towards the price of your AP renewal.
Chef Mickey serves mac & cheese with mickeyronis, also their ravioli is mickey head shaped

somehow I don't think the stuff they took away will come back and I think it's primarily for cost and time reasons. I would think creme brulee would be too expensive to maintain for just a week, or like the shrimp noodle bowl is too expensive to keep for DDP purposes.

I see people out there all the time. I've seen the ones near the pools on the first floor actually take some of the pool chairs and bring it in front of their room.
No one is going to say anything to you.
If you do decide you want to back to the hotel first, and cab it back later, the easiest way would be to take a taxi to the Beach Club, then walk to the International Gateway of Epcot.
