Having UEP you will be able to use the express lane at Minions. And I aways recommend doing the HP experience all together so you can experience the Hogwarts Express both directions. I just like to stay in theme/character. Then we tackle the other areas later.

I would split the water park day into half day @ Epcot and keep full day @ AK or vice versa. That way you can at least pre book 3 FP for both EP and AK
