You might want to give Kona Cafe a try. Being at the Polynesian, it's literally only a few feet away from the monorail station. The food there is excellent - if you have a sweet tooth, go for the Tonga Toast, or try a fruit plate...
The Keys are awesome. Lots of warm-water beaches and places of historical interest (from Pirates to Hemingway), some nice day hikes, and a great place to just plain relax.

The best thing I can think of is to get there as early as possible (2+ hours before scheduled flight) and plead your case with the check-in agent. I think if you let them know you're traveling with children and they have the seats available, they'll try to accomodate...
You can go to the Polynesian and park him at Tambu Lounge, right next to 'Ohana on the second floor of the Great Ceremonial House.
He can make his way through the menu of refreshing tropical libations served in cool tiki mugs while watching sports on the big screen TV in the lounge. Careful...
