I would choose something iconic that you know they won't tamper with or move, like the castle or the Partners statue. The Dumbo car wasn't there last time we visited (it's probably back now), and I think the tea cup wasn't there on one of our visits too.

You can also pick up a map in the parks. It tells you the locations and the character type.
