We did not carry our own luggage off when we did this. It was waiting in the luggage hold area at PC and we grabbed it and proceeded to the DCL bus to our resort.
When we have done this, we have been at the resort to check in after our cruise at about 9 or 9:30am (of course, we had main seating so the early breakfast). We had practically the whole day to enjoy the parks!

We docked at both of these ports in August. I think it depends on how many ships are in port at the time you dock. Sometimes, they need to tender in if there is not dock space. I'm not sure how often that might occur, however.
Room service is not available on debarkation morning. On our last cruise, breakfast for main seating was 7 or 7:15am and second seating was 8:15-8:30am, depending on which restaurant you were in the night prior to debarkation. I don't think the buffet is available on debarkation mornings either.
