We were on the 2/20 cruise as well. I expected crowds at the kids pools, so it didn't bother me. I also expected the chair hording, but that did bother me. If people didn't save chairs then there would be plenty of chairs for everybody who needed one. Disney needs to police this a little better...
Our kids wore dressy shorts and collared shirts. The adults never wore shorts, but did wear nice dark jeans. On the optional dress up night (4-night cruise) the kids did not wear shorts and I wore a jacket and wife wore a dress. I did see some adults wearing shorts on the dress up night. However...
I wouldn't give up any of them, but if I had to it would be Enchanted Garden. We did have lunch at EG one day and it's just a very basic buffet, paling in comparison to Cabanas.

We were on the Dream 2/20/11 for a 4 night. The most disappointing thing was how people would snatch up the lounge chairs on the ship and on CC. Disney does say saving chairs is not allowed, so I did see Disney crew walk around and pull towels off empty chairs, though I wish they would have done...
