the only way to avoid it would be to book your first night as room only. You would have to make a separate reservation and then go to the check in/out desk the next day to re check in. Might be worth it if you really don't want the dining plan for that one night.

I think you should be fine b/c you have the credit card # on file. When you arrive just let them know that you are not going to be using credits and tell them how you want to pay. Even if you had kept the dining plan you could have decided to pay for the meal OOP when you arrived.

I definitely wouldn't say that this is only something I know about, but another must have item for us that doesn't always get a lot of attention are the frozen drink slushies from Goofy's Candy co. We will go to DTD just for those slushies and they are a snack credit which makes it even better.
