Disney village stores were open until 11 I think when we went, Hotel New York had "ice skating", you can visit the other hotels, I am sad that we missed seeing the gingerbread house in Disneyland Hotel.

I think that your plan could easily work, as one day we had brekkie at 8, ate lunch at 2( we brought in a small snack for us while waiting in line to see Santa's village) and had dinner at 7. I kept some snacks on us that we brought from home, that seemed to help my DD and my DH not be grumpy.
