My biggest issue here is there is nothing cueing them in that you have a disability (the DAS was a nonverbal clue) so you are going to have to tell CMs over and over all day long to get times. **sigh**
Otherwise the system sounds fine to me.

We always do the dxdp because of my son's food allergies. Its a lot of food... no doubt about that... but its good food!! We very much enjoy the variety of sharing different appetizers and desserts. We usually only do two meals a day so we don't feel like we're "wasting" all our time...
Our family favs include... Cali Grill, Sanaa, Le Cellier, Ohana, 50's Prime Time (kids choice... but it is a fun atmosphere).
We don't do CS because of allergies so I can't help you there.
Depends on what you are looking for. We've eaten at both several times. The food is much better at Ohana but the character experience is better at Chef Mickey's. (at least in our opinion)
We struggled to get ADRs at any time of day for our trip in Nov. We just booked a week ago and everything seems booked solid. It shocked me!! Hoping that isnt foreshadowing what the parks will look like!!! Eek!!!
