I think people are paying a premium and expect perfection from every aspect of their vacation. When it comes down to it, the people serving you/cooking your meal/etc are only human and are doing all that they can to accommodate massive crowds, so not everyone gets the experience they're hoping...

Mmmmmm, the maize crusted corvina looks just as good as it did when I had it in January. It was a different kind of fish (don't remember the name) but the sauce looks the same! I'm glad you enjoyed it as much as I did. Yum!
