We used the concierge at our hotel (Caribbean Beach) to switch from credit card payment to Dining Plan for the Mickey's BBQ show. I would suspect they could help you switch payment from a credit card to a gift card as well.

We've gone the annual pass route and the AAA route. The room discounts are better with the annual pass and we found the ticket/room package rates to be the same or better booking directly with Disney rather than AAA. Having said that we just got back from a trip to WDW that we booked thru AAA...

We just stayed at the Carribean Beach the first week in Oct. We really loved it there.

We just went at the beginning of the month and it was sunny and mid 80s for high temps all week. The end of the month may be a little cooler. We always check weather.com a couple of days before we leave.

Did you buy your photopass CD before going to the park or while you were there? I've heard there is a discount for buying it before going.

Yes, there is a Wendy's and a Chick Fil A across from the Applebees.

I think this is a good idea. Hopefully it will make it easier to get reservations.
