I've ridden these rides alone with my two boys when they were 5 and 7. They sat together and I sat behind them. The only ride you might not feel comfortable doing this on is Space Mountain. Since only three people ride in a car you'd be split up on two cars.

I'm not sure if you saw Brent's post about the 2103 blackout dates that we had for OMDD. I would assume that you guys will have the same dates. For December it was the 1st and 15-31 so hopefully that will fit into your current plans. :)

For those of us who won OMDD, there was no problem adding extra family members. You just pay out of pocket. The only thing that might be problematic is that the rooms will only hold so many people so that might limit where you can stay, but you can worry about that when you win. :)

For OMDD we weren't allowed to add the dining plan to our prize package unfortunately.
