I just looked online and found a suggestion for making gingerbread men out of felt. They paint them with fabric paints, so evidently it works.

These are really great ideas. I especially like the lime and cilantro one. That would also be good with strips of fried, spiced beef, sauteed mushrooms and bits of roasted red bell pepper added.
