CM & CP are very similar food-wise and since you're doing 3 buffets, I'd cut one of those. Keep San Angel so your husband gets his choice. That way you have one non-buffet, more adult-oriented atmosphere meal.

Definitely Hoop-Dee-Doo! I find Whispering Canyon to be hit and miss. We've had servers who just weren't into it and that really lessens the fun.
