You might try the Behind the Seeds tour at the Land in Epcot. It's a behind the scenes look at the greenhouses, aquacell (feed the fish!):goodvibes, and IPM (integrated pest management). Don't forget to ask about discounts (Disney Visa, AP, DVC, maybe AAA?).

We were there last year after the official end. If I remember, it took them a day or two to remove the topiaries from the front theme garden. Other things didn't all disappear overnight but over the next few days.
