Check out disney.com. An option under Fantasy is information about Remy's, including a menu.

We dined at Remy's about 2 weeks ago, onboard Fantasy. I don't recall if it was exactly the same, but some of the menu items are familiar. It was divided into two themes, American & French. A mix & match option is also available so a guest can alternate some course choices between both recommended menus.
