Eat at Home 3!

Finally made gumbo yesterday but will probably not be cooking (again) tonight. I need to drive over to my father's to deal with a few things that have popped up.

DH and our guest will be on their own tonight.

The gumbo was a little on the pale side, I was too impatient with the roux.

Morning everyone! It's been a while since I've posted here! Life got super busy, but I look forward to getting back into a good routine! We've had family here, I'm pregnant (yay! due Dec. 8th) and we've been out of town. Needless to say, we've been eating out too much lately and I'm just sick of it. So here's what I've made the past week:

Sunday- Tacos
Monday- Cajun pasta with sausage and chicken and french bread
Tuesday- Sweet and sour chicken with veggie fried rice (according to my son, this is the best thing I make- never knew that, lol!) http://www.sixsistersstuff.com/2012/03/baked-sweet-and-sour-chicken-recipe.html

Wednesday- We went to Outback for dinner, wasn't planned, but we didn't spend much
Thursday- Baked potato soup with ham and cheese melts
Friday- Baked crunchy chicken drumsticks. Not sure on sides yet, steamed veggie of some sort and maybe Stove Top stuffing. Maybe baked fries.
Saturday- It's our wedding anniversary, so we'll grill steaks. Kiddo is going with my folks to a haunted hayride so something quick for him.
Sunday- Chili or Pasta Fagioli while we watch The Walking Dead premiere!

I plan to be back Sunday with a plan for next week! Have a great weekend everyone!
 
Went off plan again. DH was home early and I got back late so he grilled out.

Boneless Pork Chops glazed with Apple Butter BBQ sauce. I had a salad, DH had a baked sweet potato.

Wednesday: Buffalo chicken, cheesy biscuits, broccoli
Thursday: Pasta with black beans, tomatoes, corn and cheese
Friday: I have my late night at work-leftovers
Saturday: Grilling steak, Alexa waffle fries
Sunday: My workout class studio is having a Halloween party, we are eating there
 


Menu Plan - week of 9/22
Saturday- butternut squash chili
Sunday - chicken stir fry
Monday - leftovers
Tuesday - meatloaf, mashed potatoes, green beans
Wednesday - egg frittata
Thursday - stuffed acorn squash
Friday - steak, sweet potatoes, roasted beets
 
Stayed on track for the most part this past week... still ate at home, but some meals were replaced with others

Sun - Bacon wrapped sirloin on grill, sauteed onions/mushrooms, spaghetti squash, roasted broccoli
Mon - Crockpot smothered porkchops, green beans, roasted cauliflower
Tue - Hamburger casserole
Wed - Roasted one pan meal (chicken thighs/drumsticks, bite size potatoes, carrots coated with EVOO & seasonings)
Thu - Leftovers/Fend for yourself, possibly spaghetti squash & mushroom bake
Fri - Burger patties on grill, roasted cauliflower, green beans
Sat - Kielbasa one pot meal w/ sliced potatoes & carrots

It was gorgeous out and DH wanted to grill again so the chili became burgers.

I don't know why I bother with a plan, we never stick with it!
 
jsmla- I am totally stealing your apple butter bbq idea for next week- that sounds yum!

Last week DH and I ended up taking some leftovers one night since we forgot DS had his class ring ceremony and they were eating there. It worked out ok since we were both working that night. Another night DS felt sick and didn't eat dinner so ended up having that another night, I had some other leftovers, and DH grabbed something with co-workers. So two carry over meals this wee. I'm not sure what order these will be in since DH is back on days this week, I work some nights, and DS has practices and a game, but here goes the plan:

*chicken quesadillas with guacamole
*pork roast with salad and biscuits
*bacon potato soup
*fall salad
*grilled sirloin (wrapped in bacon if I have extra- thanks for the idea wdw4lif!) with roasted veggies and garlic bread
*chili-orange shrimp (tuna for DH) with spinach couscous
Have a tasty week everyone!

Thurs (entertaining multiple teens) - Scrambled Eggs with Optional Shredded Cheddar and Salsa, Tater Tots, Homemade Banana Muffins, Clementines
Fri - BBQ Pork Sandwiches, Coleslaw, Smoothies
Sat - Leftovers, Frozen Pizza, or Out
 
This Week:

Monday: Tacos - had tacos
Tuesday: salmon, rice, veg - ate a frozen lasagne I had made pre-baby birth
Wednesday: loaded baked potato soup, salad, cheese bread - leftover tacos
Thursday: beef stew in crock pot - ate at my moms
Friday: pork chips, rice, veg - ate at a friend's
Saturday: pasta of some sort
Sunday: Dinner at my moms


How I did last Week:

Sat- butter chicken, rice, nan- had this
Sunday- BBQ' chicken, salad, baked potatoes- ate at the inlaws
Monday- pulled pork sandwiches, homemade fries, salad- had pasta and meat sauce and salad
Tuesday- salmon, rice, veg- had chicken fingers, fries, salad
Wednesday- beef stew in the crock pot- taco salad with ground pork not beef
Thursday- DD has Volleyball away so thinking subway honestly- I put a pork in the crockpot so we had pulled pork sandwiches, salad and Annie's mac and cheese
Friday-chicken tortilla soup, quesadillas- had turkey soup and cheese bread from freezer
Saturday- leftovers - ate out- took father in law out to his favourite brew pub as a thank you
Sunday- roast beef, mash, veg- frozen left overs

Wed-loaded baked potato soup and buns, not sure of veg
Thurs-ham and potato bake with broccoli
Fri-homemade pizza
Sat-Marie Callendars pasta bake
Sun-chicken and noodles

**Our car is currently in the shop. Not sure what the trouble is yet (they haven't called with the diagnosis) but by the symptoms it might be the transmission. We have been vehicle-less all weekend as we couldn't take it in and weren't sure if it was safe to drive. Not fun! Glad we have a nicely stocked pantry, fridge and freezer, so we have (and have had) plenty in the house to eat! We are low on fresh produce though, and I can't go get anything tomorrow or Wednesday, so our meals on those nights are dependent on whether or not I get to the store sometime this afternoon or tonight!
 
Hi there, it's been forever since I posted. I went back to work and little things that I enjoyed like posting here have been hard to keep up with!

Monday- chicken and noodles with mashed potatoes

Tuesday- taco night with smart life crumbles and homemade pico de Gallo and guacamole.

Wednesday- lemon spaghetti, green salad and bread with olive oil and spices for dipping

Thursday- unstuffed peppers over mashed potatoes

Friday through Sunday we will be out for a Fall leaves touring trip. We will stop wherever looks good, but I'm hoping for some awesome diner pancakes and a good Ole Pizza Pie and a nice red.
 
Sunday-DH and I went to the New Orleans Po-Boy Festival and ate there.

Monday
Turkey Sloppy Joe's
Baked Beans
Cole Slaw

Tuesday
Tonight should be:
Pork schnitzel
Baked sweet potatoes
Green peas
 
Thank you all for posting your weekly menus! It's given me so much inspiration. I've been eating really erratically lately and I realise that my problem is that I just don't have a binder full of tried and true recipes that I can turn to and pull out from to decide what to eat. My weekly grocery shop is done in a very haphazard way and it seems like I just need a little 'oh, this looks good' to put things into my trolley with no consideration for what I'll do with that later. I always seem to end up eating a few raw vegetables and some deli meat which leaves me unsatisfied and ashamed because I love good food. I need heartier meals. I'm going to make a list taking inspiration from your posts and try to find recipes for those. I'd love to have a binder with at least a couple of dishes in different categories before the end of the calendar year.
 
The cupboards here are getting bare, especially produce. I was out yesterday evening so made a pot of dirty rice with smoked sausage from what was available before I left, no veggies. Eating out would have been healthier!

Haphazard isn't bad - I pick up what's beautiful and cheap all the time. When you do that, you'll want to make sure you have a "base" where some of those things can go. Eggs, Lentils, Chicken, and Pasta (Spaghetti and Risotto) are 4 of my favorite savory items to have on hand to use for "unexpected" stuff. Greek Yogurt, OJ, and Boxed Crumb topping (or a base muffin recipe - I use my own from Epicurious) are 3 of my favorite sweet items to have. If you have some bases, they become dinner (or breakfast) with practically anything you buy.
