I have been to DL many times up until 2102 where you could get FP and come back whenever it was convenient. We have done DW the last three times.

Going back to DL, any rides that need to get FP right away? Or will there always be availability. We have never been to Cars land, so that is especially important. What about World of Color? (we are planning on getting Jedi Training right at the start).

We are going late October during the week, so shouldn't be super crazy busy.

Keep in mind Disney now follows the return time stamp on the FP. FP's can NO longer be used outside the time stamp.
We like to ride RSR first thing in the morning and pull a FP's for RSR after dark. The night lighting of the ride at night adds to it.

Don't be surprised if the parks are busier than you expect. You're right, weekdays shouldn't be super crazy.

As Geemo mentioned, they are enforcing return times now, so plan to use your FP within the time window printed on the FP. Also note that unlike WDW, there is no stated/official/formal/consistent grace period.

None of the attractions have FPs that run out within almost immediately after the park opens, but some will run out before the day ends. By far, RSR is the most popular attraction FP. After that, it's probably a toss up between Soarin' and ToT in DCA. I would say that Space Mtn (especially when it was HyperSpace) is the most popular one in DL. Space Mountain Ghost Galaxy doesn't seem as popular (which is what will be running in October), but I would opt to get a FP for that one (rather than standing in the stand-by line which can be very hot).

WoC FPs don't seem to be running out that early anymore, but again, I would get one rather than chancing stand-by. I'd just get it whenever you happen to be over by Grizzle River Run.

Weekdays in October should be manageable, but as mentioned, it will still probably be on the busy side. October (HalloweenTime) is very popular at DLR and there are a number of schools that have breaks (e.g., UEA on 10/20-21, Nevada Day on 10/28, etc.). So be prepared for some crowds, especially on Fridays through Sundays.
 
Star Tours will often either run out in the afternoon or get very long return times as well, but Space runs out first.

You might download the Disneyland app and look at the FP and wait times in the weeks before your trip to get a better idea of how the wait/FP times are going.
