Eat at Home 3!

Rosemary chicken, potatoes, green beans, cucumber salad

Mongolian beef and broccoli/carrots on noodles
Beef enchiladas home made salsa, squash and onion
Beef chili made with fresh tomatoes, cucumber salad, maybe potatoes

I went to a salvage store last week. I wasn't expecting much but they had a fantastic ethnic section. Five of the meals are jarred sauces I picked up for a little as 49 cents. This week is our cheap week. Groceries were $38.33 and the garden is producing tons of stuff. Yay!
 
We are too!! Disney World next November!

We are saving for Italy next May (which is comperable to a Disney trip in a mod), and China in 2018/2019. I figured we were blowing thousands a year by eating out, not meal planning, and wasting groceries. Add all that to our modest vacation budget and suddenly we are doing some awesome stuff.

My overall goal is a Deluxe for the 50th anniversary of the Magic Kingdom in 2021!
 
My trip this week: $78

Now that is for 2 weeks PLUS also includes a ton of over the counter medications and toilet paper! So I am very happy with it.

Ours was about the Same!! We have a ton of stuff in the freezers to use up before winter and we do our next stockup

Our grocery list just has fresh fruits and veggies on it right now!

Do you have a recipe you could share for the Mongolian beef? That sounds so good and my kiddo would LOVE it!
 
Last week:

Monday- we had BBQ'd chicken breasts, salad and orzo
Tuesday- shepherds pie, salad (we had shepherds pie and fresh yellow beans)
Wednesday- We had a frozen casserole (we had a casserole- turkey leftovers one)
Thursday- some sort of pasta with meat sauce (chicken tortellini with pesto)
Friday- either a frozen casserole (not sure what we have) or a pulled pork (we had pulled pork)
Saturday-chili, cornbread, salad (went to a 90th birthday with my mom, DH glad leftover pulled pork)
Sunday- possibly having some friends for dinner- maybe a fondue? ( I forgot it was BILs birthday dinner at outlaws)


Good week!

This week:

Monday- simple- grilled cheese and tomato soup maybe? (We were lazy- I had a peanut butter sandwich and DH had chips and salsa)
Tuesday- grilled chicken and pasta salad (chili and taco chips)
Wednesday- appies and salad
Thursday- lettuce wraps and pot stickers
Friday- ribs, salad
Saturday- having friends over- fondue I think
Sunday- our anniversary- maybe go out to the pub?

Okay, I have Monday-Friday. I have a large pork shoulder that I put in my crockpot with s&p last night so it would be ready to shred at lunch today and that's gonna be the base for most of my meals:)...
Mon - BBQ Pork (homemade red version), Cole Slaw, Cherries, Beer Bread
Tues - Classic Caponata (Eggplant Italian recipe) over Quinoa with some Shredded Pork on top
Wed - Pork Tacos, Strawberries
Thurs - BBQ Pork (different sauce - this one brown bottled), Sauteed Spinach, Banana Bread
Fri - Leftovers!! (End of pork - it will be 2-3 months before I do this again:))
 
I love hearing about everyone eating in to save for vacation. For me it's the easiest line item to cut from the budget. We don't eliminate it all together as I still like to have a date night or go to a winery or for a nice dinner with family. What I don't like it running out to eat because we didn't plan better. It's a waste of money, unhealthy, and unnecessary spending. We've started cutting back years ago for a trip, and it's just been the way we do things ever since. That being said, we have a kid free week so dh and I might be going out this week.

Menu so far..
Monday- Lemon pepper sole, broccoli , potato leek soup

Tuesday- Veggie stir fry with tofu over brown rice

Wednesday- Maybe a local supper market, or a thai place we love. Maybe home..if home it will be homemade wonton soup and salad

Thursday- BBQ chicken. Veggie and goat cheese pizza, roast cauliflower

Friday.. not sure. Something quick as we are packing for a week away at the cottage and leaving really early the next morning to avoid holiday traffic. Maybe pasta.
 
Well my weekend is still a little unsure...as we are going out of town to visit family but the plans aren't firm yet but I'll put down what I have anyway.

Tonight-pork chops, stuffing, broccoli
Tues-boys on own (likely Kraft Dinner--yuck!), DD and I are packing a lunch for in the car as we are heading to the temple for the evening
Wed-chicken and noodles
Thurs-leftover chicken (maybe broccoli, chicken and rice casserole?)
Fri-either sandwiches in the car or dinner with family--it depends on what time we leave to drive down to my mom's
Sat-dinner at my mom's
Sun-again unsure, either eating in the car or soup and grilled cheese once we get home
 
Tonight we had corn dogs with salad and fruit. Not the healthiest but quick and easy.

The plan is to make these meals the rest of the week. I will decide on sides as I decide what to make each day

Chicken paprika
Grilled chicken with roasted potatoes and zucchini
Sloppy joes
French toast with sausage
Turkey meatballs with spaghetti
Ribs and sides from the grocery
Tacos

Wednesday- Orange chicken(frozen) and fried rice
Thursday-Shrimp scampi or Mexican shrimp cocktail -cucumbers, tomato, cilantro, lime juice
Friday-BLT's
Saturday- Family going to BDay dinner
Sunday- ?

Once I use up all my stuff , I plan on going healthier and less frozen foods.

-3 packs of the knorr pastas for sides
-large bag of white rice ...need ideas besides Mexican rice, fried or plain rice
-2-3 boxes of pasta boxes zite and minocoti
-3 large jars of peanut butter..need a recipe for large chewy peanut butter cookies or treats
- large can of enchilada sauce but no tortillas
-mozeralla cheese
-Large block of cobly cheese
-3 packs of frozen bacon
-3 cake boxes
I'll have to check the rest of my pantry

Just a quick thought about the rice: you can use it in stuffed peppers along with the enchilada sauce instead of tomato sauce and top with mozerella or Colby cheese. You could also use the peanut butter to make a Thai-inspired dish along with the rice. Enchilada sauce and cheese could also be used to make a sauce for some of your pasta, and add olives in too. My family likes black olives in Tex-Mex and Italian type dishes. The Knorr pastas can be the base of your dinner, and just use whatever protein that's on sale at your store to add to it along with some veggies.

Easy way to use some PB - make rice krispie treats and throw in 2-3 tablespoons of PB to taste. Gives the treats some protein and tastes pretty darn good:)...
Hot and Cold sesame noodles (Rachel Ray has a base recipe that you can and should change up to taste - make sure you like the sauce before you put it on the noodles - see reviews for some people's suggestions:)) also will use up a bunch of PB in one sitting...
Peanut butter and jelly muffins will also use it up - use the base muffin recipe on Epicurious and then add a few TBs of PB to the batter and then add fresh fruit (like bananas, cherries, blueberries) to the batter or top the batter in the muffin cups with a 1/4-1/2 tsp of all fruit preserves per muffin (I like strawberry)...

As for the rice, if you don't like the stuffed peppers idea, I would make rice pudding. Any rice will work, although you have to change cooking times depending what kinda white rice you have.

The other thing that we've found very beneficial about not eating out is that our DD12 now eats everything rather than only eating chicken fingers and pasta and that- because we limited the eating out/takeout/pre made food,
she doesnt really like kid food as she finds it boring/bland and will eat a wide variety. We do eat out once in a while but it's generally an ethnic type restaurant or local...we tend to avoid big chains

I'm trying to avoid going to the store but I love the stuff pepper idea. I'll put in on my next grocery trip. I think I have frozen chicken so might make a no tortilla enchilada or add tortillas to the grocery list

For the PB I have flour, sugar, brown sugar, powdered sugar just need to find something to make. I don't have rice krispies. Trying to use what I have on hand
