It's been a while since I cruised (a few years) and my memory is going, so someone kindly remind me...!

Paying gratuities to the room host / hostess, Dining staff, etc. I seem to recall these were just billed to my room. I think to raise it (which I did), I can go to guest services on the ship at anytime before the end of the cruise and they just printed out the new one which was just a piece of paper I slid into an envelope for them.

I.E. I didn't / don't need cash for any of those tips.

Is my memory still okay on that point?
 
Are the bartenders included in the charged gratuity? Or do you recommend bringing extra cash to tip them after each drink?

When purchasing drinks at the bar and automatic 18% (I think) gratuity is added. You can tip more than that by adding it to the slip you will sign at the bar.

Bartenders are not part of the $12 per day gratuity pool. HOWEVER, all beverages that you purchase (whether alcoholic or not) will have an automatic 15% gratuity added. This gratuity is pooled to be split by all beverage servers and bartenders. You can tip additionally beyond that, if you wish, to specific servers/bartenders. If you do, they will be allowed to keep the extra tips individually.
 
Whenever I tip above the recommended amount I use cash. I hate the hassle of having them reprint the vouchers so I just add the extra in cash to the envelopes. Never had a problem with it.

When dealing with the Cabin Steward, Assistant Server and Server, that's our practice too.

Hmm. It's possible they meant to say room service. We make sure to have extra fives or singles for a few things, including room service delivery.

It's not 1's and 5's I worry about. I usually have at least a few of those wandering around since I like to tip the various people who help me get there as well (parking service, curbside checkin, ME Driver, etc).

However the main tips add up to something like $15-$20 / day I think. So on a 7 day, that's $140 or so base tips. That requires hitting an ATM before I leave and putting that money aside.

The main tips will be added to your on board account. You don't need cash for those.

I didn't know that the beverage servers had their tips pooled. I see some working so much harder than others. seem like I need to give a extra dollar or two more often.
 
I like to give extra with cash, that way on one knows about it, ie taxes

I would bet quite a bit that the employees onboard aren't skipping out on taxes.

There is no recommended amount for concierge unless the link PS gave now includes one. But they will put a sheet explaining that you can tip them and how in your room on "tip night". You can do cash, you can fill out the form and hand it into the concierge desk, or you can go to the Guest Services desk (it's the one time concierge won't get their feelings hurt if they see you there LOL).

The main tips are just charged to the account which is charged to your CC/debit card/cash account you've set up.

Some people do like to add the extra in cash, but I, too, wonder if the person you read was really meaning room *service*. And that would be a matter of 1s and 5s. :)

I didn't either. What is your source for that (someone said so on DIS, or is this from Disney or at least one of the bartenders)? In fact, I've been told differently by one of the beverage serving staff, but I still wouldn't say I know for sure.

We have had some fantastic beverage servers (bartenders and baristas) over the years, and have generally rewarded them with extra tips. And have had some interesting conversations with them after a couple of cruises when they would open up.
