I have a question for those of you who freeze meals regularly...

How do you wrap the food to protect it from getting freezer burn? And then tasting like it's been frozen...

I bought a big pack of meat from Costco the other day and made sure to get the freezer baggies. Tried to get all the air out before I out them in the freezer but within a day, the meat is covered with frost. Same thing for some prepackaged chicken breasts I bought there too.

My vacuum sealer is my friend! I'm single and buy meat from Costco and portion it out. The vacuum sealer does a fantastic job. I got mine at Costco.

I have been super busy the last 2 weeks.. so haven't really had a minute, but I just have to share this with you. I spent the day with a friend last week that got me started with the freezer meals. She is a really good cook, really more along the lines of an amazing cook. We spent the day putting up meals, all made with beef. I never had any idea that she had so many great meals that can be frozen made with beef. But now I have totally changed my plan on freezer meals and I am going to be making a few of her meals to add to my freezer.

So " Here's the Beef"..:D I just give you a run down on the day and what the dishes were. If you have any questions, please ask and I will try to answer right away, if I don't know I will get with her this might take a day or two. But I will try to answer everyone. She did cook quite a few roast the day before and over night. Plus her 2 daughters and 3 daughter in laws and me where on hand to help.

Frist, Let me say she did a lot of stuff before hand. So here we go..

1) She had her DH grill a couple of briskets (3) on the BBQ the day before low and slow, for shredded BBQ Beef. I was task with shredding it all and adding it into a pot of simmering BBQ sauce, she will not tell me the recipe, but its a cross between a southern sweet and North Carolina tangy. Which simmered most of the morning, then taken off the stove to cool, once cooled she puts it in freezer bags but different portion size.

2) Beef, Broccoli and Wild Rice -With a chuck roast that she had cooked over night which had been marinated in a Asian style marinade, she had me slice it up, then blanched the broccoli just till it turned bright green into an ice bath to stop the cooking, she had cooked a large pot of wild rice the night before. Then we mixed the broccoli and wild rice with the sliced beef, and she made a sauce out of the dripping from the pan the beef was cooked in, then put it all back into the pan, tossed and coated, let it cool then into some freezer containers. We had some of this for lunch and all I can say was yummo...

3) Beef Stew 2 ways - one the traditional style ( beef, carrots, potatoes'), then one with more veggies added in, once cool into the freezer containers.

4) Beef & Vegetable, Beef & Barley, Beef Veggie & Pasta - Soup - Basically she made a huge pot of beef with onions and seasoning ( just basic salt, pepper, and some garlic), then divided it all out and went on to make the 3 soups. She likes to use Freezer bags for soup

5) Sliced beef for fajitas, or tacos also with some of the meat she sliced and mixed with yellow rice, and corn for burrito's. I did not help on these, but I know she did a Mexican inspired marinade, and there were jalapenos, red onions and some other peppers in the dish and roasted with the meat. She said you just throw it in the crock pot and warm, and some wraps, and lettuce, cheese and sour cream or whatever you like and your good to go.

That's where they were when I left which was a 8:00pm boy was I tired, they were still going strong, they had French onion soup with beef, and meatballs that they were trying to finish.

I put each piece in a sandwich bag and then all the bags into a gallon bag. Or a ziplock container after they are individually bagged.

If I'm freezing raw meat, I wrap it tightly in plastic wrap, then put the pieces into a freezer ziplock bag.

Bought a freezer two winters ago and what a time-saver at holiday time to have lasgna, chicken pies, cookie dough all made ahead of time.
Looking to make cooking for just two people more cost-efficient and time-saving. Lots of great ideas and links here!
 
I am always so jealous on these threads. I have a tiny freezer and live in an apartment so not really able to have an extra one. Thinking I will make some frozen burritos as they don't take up much room. Plus some precooked chicken/ground beef.

I also have issues with a lot of the recipes that are best for this sort of thing. Many have ingredients that I can't have. Wonder how well roasted red pepper sauce would freeze (can't have tomatoes)?

For example, you can make baking mixes that are easily turned into muffins, pancakes, coffee cakes, etc. Or jars with cookie or brownie mixes that you just add a couple of wet ingredients to and bake up. Canning fruits and sauces is good too.

This week I made Crock Pot Chicken Cacciatore, delicious! Last week I made Kid Friendly Turkey Chili (but added low sodium black beans to it) and LOVE LOVE LOVE.

I joined Weight Watchers in 2012, and needed recipes that were lower calorie and still delicious; this website is my cooking savior! Every recipe I have made is amazing.

I think I know what I am going to start with, though it won't really happen until October (too much in my freezer now and am eating from it in September to clear it out). I'm going to make some burritos, some shredded chicken, some precooked bacon, and then when I meal plan for October I will do so with an eye on stuff I can make extra of to freeze. Already know I am going to do some white bean soup in the slow cooker. I'm only aiming to have like 2 containers of it for the freezer as I don't have a ton of space and want to have a bit of variety! It would be much better for me though then having the prepackaged frozen meals... and take up about the same amount of space!
 
This is a timely thread for me, as a major kitchen remodel will leave me with a crockpot, toaster oven, microwave, and grill for cooking. I am hoping to freeze ahead things to reheat in the crockpot or microwave so we don't feel tempted to eat out too much. I have bookmarked several of the links!
 
I make twice baked potatoes and freeze them. Then just pull out what I need and bake them.

Also, I freeze slices of meatloaf. Again I just pull out what I need and bake.

Ingredients

  • 2 packages (3 ounces each) cream cheese, softened
  • 4 tablespoons butter, melted, divided
  • 2 tablespoons minced chives
  • 2 tablespoon milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups cubed cooked chicken
  • 2 tubes (8 ounces each) refrigerated crescent rolls
  • 1 cup crushed seasoned stuffing
Directions

  • In a small bowl, beat the cream cheese, 2 tablespoons butter, chives,
  • milk, salt and pepper until blended. Stir in chicken.
  • Unroll crescent roll dough and separate into eight rectangles; press
  • perforations together. Spoon about 1/2 cup chicken mixture in the
  • center of each rectangle. Bring edges up to the center and pinch to
  • seal. Brush with remaining butter. Sprinkle with crushed croutons,
  • lightly pressing down.
  • Transfer to two ungreased baking sheets. Cover one baking sheet and
  • freeze until firm; transfer squares to a covered freezer container.
  • May be frozen for up to 2 months. Bake remaining squares at 350°
  • for 20-25 minutes or until golden brown.
  • To use frozen squares: Thaw in the refrigerator and bake as directed.
  • Yield: 8 servings.
 
Just ordered our new chest freezer! Can't wait for it to get here so I can start filling it.

Freezer meals for us include pasta casseroles, chili, stew, beans and ham, slices of pizza (buy take and bake pizza and freeze slices, pop in the oven) I will make "calazones" with grands biscuit dough and freeze individually for easy lunches or for when I am away. Egg burritos are easy in our house and I freeze mini quiches as well.[/QUOTE]

I remember those days. During that time I invested in the crock pot bags for easy clean up. It is not fun doing dishes in the tub
 
Lilywdw- yes, you can freeze homemade mac and cheese. Re-heat it up in the microwave as the oven might be too drying..

Thanks! I have a mac and cheese addiction but hate making it every time I want it.

I did freeze 2 bags of shredded pork tonight and will most likely freeze more since I doubt I can eat all that I made!
