What meals do you cook off-site?

Breakfast and lunch are quite easy. Dinner can be a lot harder, takes more time, and usually requires a lot more clean up. Like you said, you're on vacation too. We tend to do whatever is convenient which often means unhealthy -- nachos, fried chicken, roasted chicken, etc. We usually strive for eating in our hotel for 2 out of 3 meals plus snacks. If we eat out once a day, we're doing pretty good.
 
We did things like wraps, bbq steaks, roasted chickens, salads, mini potatoes. All easy stuff to make.

We made a big breakfast one day, but mostly we were rushing out the door and had bagels, smoothies to go. One thing we did that the kids really liked was I used disposable plastic cups and made yogurt parfaits each morning using frozen mixed berries. By the time we were ready to go out the door, the fruit had thawed, sprinkle some granola or nuts on the top and eat in vehicle on way to park. (Not recommended for younger kids.. lol)

When we checked into condo and got our groceries, I did about an hr and a half of prep work for the upcoming week. Washed and cut up tons of veggies, made a huge macaroni salad and bean salad, cut up a couple of roasted chickens, boiled a dozen eggs for quick breakfasts. Just so we had easy stuff to grab. My kids are older and can make their own sandwiches/wraps dish up their own stuff so having it ready in the fridge was great, and I didn't feel like I was cooking the whole time. Dh bbq'd a couple of times and we just used what was already in fridge for sides.

This is how I prefer to do it too, get as much of the cooking done ahead of time as possible. We have a ten hour drive so rarely go to the parks on our arrival day. I almost always cook a pot of pasta, brown some ground meat and wash and chop veggies that evening. It makes meal prep during the rest of the week easy peasy.
 
We stayed at a 3bedroom resort with a full kitchen ( WorldQuest) so what we did was we went to Costco and bought easy to make meals like a take n bake pizza, pulled pork you can out in the microwave ( really good by the way) and one night my sister made tortilla soup in the crock pot.

Our breakfast were pretty simple too. Toaster waffles, microwave bacon and eggs cooked on a skillet.
 


For my family, breakfast is a no brainer every morning unless we are doing a character breakfast. Bringing (or buying at a local grocery store) some fruit, cereal and milk couldn't be easier. We rarely eat lunch in the condo. For dinner, I'm a huge fan of crock pots because we can let our red beans, chili, chicken in wine sauce or whatever we are cooking go all day while we are at the parks. We have also frozen meals and brought them with us (we drive and it takes about 10 hours door to door so spoilage isn't an issue). On average, I think we eat dinner at the condo about 2 or 3 nights out of a week long trip.

Has anyone brought a crock pot on the plane? I think ours will fit in my suitcase (we have one of the rectangular ones with removable base) and we are flying Southwest, so lots of luggage space!
