2015 Magical, Magnificent, Mighty May WISH challenge! All are welcome!

Chicken Parmesan pasta bowls sound delicious ! Care to share that recipe :)

SUPER easy... but to be honest it was more like chicken cacciatore than chicken parm. I just threw some raw meat (pork in my case because of DS's allergy but you would probably use chicken breast, boneless and skinless) into the crock pot with a large can/jar (or two) of spaghetti sauce and a can of diced tomatoes. Cook on low all day and shred the chicken when done.... it is essentially like making pulled pork but with spaghetti sauce. I served the chicken/sauce combo over whole wheat pasta for my DS and over shirataki noodles for DH and myself. Topped each bowl with some shredded mozzarella (like you would put on top of chicken parm) . I also added sauteed mushrooms and red bell peppers to mine, to bulk it out a bit. It was super easy and super yummy! Next time I'm adding sliced onions to the crockpot.

I am still here! I am in my last 6 days before I leave on vacation and am starting to feel very stressed out with all the things that need to be done before then...

Don't stress... vacation is supposed to be FUN! (That being said, I TOTALLY understand the feeling!) HAVE FUN!!!!!!...............P
 
What a great question of the day!

$5000 on myself would be a Disney vacation (fairly obvious). I love to go and wish I could go every year. i would splurge for a stay at the Polynesian as I love the vibe at that resort and haven't been able to swing it just yet.

$5000 on a charity. I would donate it to our local Catholic School's scholarship fund. I would love to give families that would like to give their children a Catholic education the opportunity if they can't afford it. This is by NO MEANS a bash on public schools as there are some really fabulous public schools in my area but the small classes and inclusion of religious education and activities on a daily basis is very rewarding. My son remains an altar server even as a high school student.

As far as my May goals, I still at 2/5 lbs lost...not good. But I have been meeting my daily average of 10,000 steps a day. I feel good even though I am not thinner. Have a great weekend everyone.
 
Guys, the past two weeks have not been good for me. I've been feeling unusually lethargic and a bit down. Obviously this has been countered by EATING EVERYTHING. Slacked a bit on the gym, but I have been trying to keep up my running. Thought I was getting back on track, and found out yesterday that my best friend's father passed away. I've known the family forever and we're very close. It's been a total shock to everyone, he was very young. Not on track anymore.

Anyways, I'm not sure how much time I'll have to pop in the rest of the month, but I'll be back for June and hopefully things will slowly get better.

I haven't lost any weight this month as I gained back the 2 lbs I had lost when I weighed yesterday! May just be a blip but either way I didn't meet my weight loss goal but I'm happy to say that while I did struggle (obviously lol) I didn't give up and I got my 20 minute walk in every day so at least I didn't gain like I normally would when I'm finding it crazy busy/hectic/mad in life!!

I'd use my money to travel to new places. I'd love to see the Grand Canyon someday but I'd also love to visit NY and Washington and Boston and and and .....you get the idea....:car:

My charity would be Marie Curie which is a palliative care team that not only run hospices but also provide nurses to families that give support so people can pass away in their own home if that is what they wish. They do amazing work and I did a 10k walk last year with my daughter, niece and sister to raise much-needed funds to help them continue.

I think a SPLURGE vacation sound perfect! Glad you are staying positive, despite not meeting your May goal... but great job on the steps!

I'm SO WITH YOU on using the money to travel. I'm such a wanna-be traveler... but there is NEVER enough time or money! Sounds like you need top plan an Eastern Seaboard road trip.... you could see NY, Boston, and Washington, DC ! You could call it a "hitting the highlights" trip! 48 hours in Boston, 48 hours in NY and maybe 3-4 days in Washington. DC is a great city to be a tourist because the Metro is user-friendly and all of the Smithsonian museums are FREE! If you stay on the outskirts instead of in the city and stay at a hotel with free shuttle to the Metro it can be a very affordable vacation.

Grand Canyon was on my bucket list for a looooooong time and I finally got there in 2005 (wowza.... can't believe it was that long ago!) and it was SO WORTH THE WAIT! Awe-inspiring doesn't describe it.

Your charity of choice sounds really great.

Hey all! Skipping a QOTD as things have been so very quiet and I am so very busy today! My Mom will be here about 2pm to see DS off to Prom and the house is nothing short of a disaster zone. Time to put on my running shoes and some good music and get hustling!

What a GORGEOUS day here today! Supposed to be very warm later (like into the 90's) but right now it is in the high 70's and super sunny and a BEAUTIFUL breeze is blowing! DH and DS are walking in a parade today to represent the Robotics team, so they are gone for now.... which will definitely help me get some cleaning done! :rolleyes1

I'll pop on later to see how everyone is doing!................P

You are doing well with keeping active! I think maintaining and not gaining is already the first battle most of us have to win. I totally understand how frustrating it is, just don't give up. I have been struggling losing and regaining the same 10 pounds over the last two years, but I know that because I kept going, it is only 10 pounds that I have been going up and down. Not 30 pounds up!

I realized today that I need to get back on the scale. At least momentarily. I need to make sure that my suitcase for my vacation is within the weight limit. I am paranoid about that. And the only way I can weigh it is to first weigh myself and then step on the scale while holding my suitcase and then subtract my weight from the total. So, I need to step on the scale. I am scared. :scared1: I know that I have lost weight. My clothes start to fit well. I can see it in the mirror. But I am afraid that the number of the scale is still higher than I hope it is by now. And I am afraid that this will set my mood for the vacation and that I will go into it thinking it does not matter anyway what I eat. So, the strategy is to step on the scale tomorrow morning for the first time and then to weigh me everyday until I leave on Thursday. I know that my weight often fluctuates and hopefully there will be one day with a nice number. I am already trying to set my expectations very low. Originally I was thinking that I won't step on the scale until my smallest clothes out of my usual wardrobe start feeling lose. But I guess that won't work... I guess I just need to keep telling me that it is all about the inches and not about the pounds and I know I have been successful with the inches!

The 10.000 $ question:

The money for me would be spent on a trip to Japan (including Tokyo Disney Resort, but not as the exclusive destination). Of course I would prefer to be able to take someone with me with that money, but if that is the condition, then I will even travel alone!

The money for charity would go to a Women's development aid charity that I am involved with. They are rather low key and have a number of small projects helping out women in developing countries to generate a better income for their family. Women who earn money tend to spend that money on feeding their kids and giving them access to a better education. In my opinion this is the best way to break the vicious cycle of poverty if the next generation has the possibility to get a better education and therefore has a better start in life.
 
I have not been good with keeping up with all the posts. I followed so many threads I lost track. :) I manage to 7/10 lbs. Didn't reach my goal but had a slow start to the month.
