Would love to hear what people would heavily encourage us dropping or changing, or if people recommend specific dishes at certain places...

Saturday dinner - 50's Prime Time Cafe
Sunday dinner - Yachtsman Steakhouse
Dessert - Beaches & Cream
Monday Breakfast - Trattoria al Forno
Monday Dinner - Hollywood Brown Derby
Tuesday Dinner - Chef's Tasting at Flying Fish
Wednesday Dinner - Le Cellier
Thursday Lunch - Be Out Guest
Thursday Dinner - Bluezoo

Not sure you want Beaches & Cream dessert after a dinner at Yachtsman. The desserts at the Signatures tend to be pretty spectacular (and frequently include something not on the current printed menu). I'd save the monster-size Beaches & Cream desserts for the BOG lunch day, or even think about moving the Le Cellier meal to an earlier time slot since I think it's the same menu all day and then having Beaches & Cream in the middle of the evening. Maybe try to time it so that when you've finished you can wander back to the International Gateway entrance and watch Illuminations from the bridge between England and France.

Edited to add: just re-read your post and realized you have dinner at Bluezoo the same day you have the BOG lunch, so Beaches & Cream wouldn't work there either. I think the two best choices would be on the day of the Le Cellier or the HBD meal, because both of those could be moved up to mid-afternoon to allow yourselves a few hours to get hungry again, in order to do the Beaches & Cream creations justice.

If you want to do Beaches & Cream, I would make an ADR for a lunch. They have great burgers and will still be serving the same deserts. Yachtsman has great desserts that you probably will not want to miss, along with being very full and dessert at Beaches & Cream can be VERY large.

Beaches & Cream may not be the spot you're hoping to pop into for a quick dessert. It stays crowded past 'typical' dinner hours. People tend to linger at their tables.

So let me offer a suggestion - Fountain, inside Dolphin. It's likely between .5-1 mile from Yachtsman, you'll likely get a seat at the counter, and the ice cream is likely better than Beaches & Cream (I doubt you'll want other food).

Then you've walked off a bit of dinner too (you can also take boat). Also, maybe you'll stop along Boardwalk and be satisfied with ice cream and candy shop, or Boardwalk Bakery.

Other than that, your choices look good to me.
