Dining Plan during Christmas

We are heading to WDW the week before Christmas (Dec 19-26). Is it safe to assume that the prices at Table Service restaurants will be at their all-time high? I am thinking of getting the Dining Plan (1 QS + 1 TS + 1 Snack) for our stay since I "think" (I haven't run the numbers...see Q #1) it will save us money due to the higher prices during the holidays and I can't use TIW during that time due to blackouts. Does this make sense? Also, if I plan to go to a restaurant on Christmas Day where they have the special menu, can I use a dining credit(s) for that or would that be out of pocket? Please wise ones, guide me!!

That depends where you're eating. Only two of your 8 days are entirely blocked out, but there are some additional block out dates for certain restaurants.
