blue bayou gumbo?

Can anyone tell me whats in this please? We don't see much gumbo in the UK! Is it shellfish? Is it spicy? My only experience of Cajun-type cooking was the vegetarian jambalaya at Boatwrights at WDW and I'm afraid I'm a real lightweight because it nearly blew my head off!:scared:
 
I'm thinking it's a chicken gumbo. But I can't say that's all. It's pretty dark in there. ;) My daughter and I loved it.
 
I've had it every time I've been there and for the life of me I can't remember what is in it. I want to say it was chicken and Andouille sausage ( I don't remember any seafood in it) and it was spicy. I use to really like spicy food but as I have gotten older I really can't eat it as much as I used to, and the gumbo was always perfect for me.

I think you're right about the sausage. And about the spiciness. We like spicy but not too spicy and it was just right for us. The jambalaya was too spicy for my taste.
 


I swear, when I went and had it, it had raw chicken. But, as was mentioned, it was so dark in there I couldn't tell! I excused myself from eating the rest of it. I'm looking forward to giving it a second chance in may.

It would be pretty impossible to have the chicken be raw.
 


I've had it and I don't think it's spicy but I live in the southwestern US and am used to spicy food. You might find it rather spicy. But it really depends on what one's definition of spicy is.
 
Is this the same chicken gumbo they serve at Cafe Orleans? DH and I love that stuff! But it is very filling! If it's the same thing, I don't remember it being spicy.
 
It's sausage and chicken gumbo.........we never find it to be too spicy but we love spice so it maybe just us.

It is delicious though

I can't put my finger on it, but I don't think it's the same. It's very similar, but there might be some subtle differences.
 
Blue Bayou Gumbo
  • 2 ounces roux (¼ cup room-temperature butter and ¼ cup flour - see note and instructions)
  • 1 cup (2 medium) yellow onions, cut into ¼-inch dice
  • 1 cup celery, cut into ¼-inch dice
  • 2 quarts (8 cups) chicken stock
  • 1 cup (12 ounces) cut okra
  • 12 ounces meat (chicken and/or andouille sausage and/or shrimp)
  • 1 6-ounce can diced tomatoes
  • ¼ teaspoon white pepper AND 1/3 teaspoon cayenne pepper (OR 1 tsp. cajun seasoning replaces both)
  • 1 teaspoon gumbo file
  • 1 tablespoon salt, divided use (OR to taste)
  • 2 cups cooked rice
  • optional: 2 tablespoons olive oil, divided use
  • optional: ¾ pound green bell pepper, cored, seeded, cut into ¼-inch dice
  • optional: 1 tablespoon minced garlic
  • optional: 2 tablespoons freshly chopped parsley
 
I've seen that recipe before (on something called Grub Post). I've tried it...I would use it as a rule of thumb/general guidance and go from there. I remember having to make a number of modifications, but I don't remember exactly what anymore.

Most southern gumbos have okra, celery, onions, shrimp, chicken, andouille sausage, and there's either rice in there or you pour it and serve it over rice. It's delicious. I've had spicy gumbo and not-spicy gumbo. The best gumbo I've ever had was in New Orleans (of course), but I'm excited to try the Blue Bayou gumbo, as I've heard this is one of the best dishes at Disneyland. :)

It really is delicious. It's my go to meal on chilly days! I hit up the Royal Veranda for a bread bowl of steak gumbo. Soooo good. The Blue Bayou gumbo is really good to dip their rolls in ;)
 
I like to make "Cajun Poutine" at Cafe Orleans, with an order of frites (french fries) with a cup of gumbo poured over it. It's my own recipe. :)
