The only time you would meet with the chef is if you have SERIOUS multiple food allergies. We had one member of our group who had a number of issues (allergic to anything in the onion family, all nuts, eggs, milk, and gluten if I remember correctly). He did get the opportunity to meet with the chef on the day before to cover everything and according to him the chef was AMAZING. He basically got his own personal tasting menu, and the rest of us were in some cases pretty jealous!
Perhaps the fact that some people have had interviews with the chef is what led that person to answer incorrectly? I'll try to give the benefit of the doubt.
Otherwise as others have said. Your choice of the two tastings or choosing a la carte. You get more with the two tastings, and there are generally not issues with substituting if there's something you seriously won't eat. They want to make you happy!
