Here is the menu for this week:

Sunday: Deli Sandwiches and Sides

Monday: Pork Roast, Kraut, and Gratin Potatoes

Tuesday: Vegetable Soup

Wednesday: Leftovers

Thursday: Poor Man's Steak with Mashed Potatoes and Green Beans

Friday: Angel Hair Pasta with Shrimp and Tomato Sauce and Garlic Bread

Saturday: Roasted Chicken with Roasted Vegetables (Potatoes, Carrots, Brussel Sprouts and Cauliflower)

Sunday: Teriyaki Chicken Thighs, Sugar Snap Peas and Rice
 
It has been forever since I was here. I need to get back in the habit of posting...

Last night was Chinese New Year dinner here, Pork and Ginger Potstickers, Egg Drop Soup and Fried Rice
tonight is home made pizza
tomorrow is meatless Monday with Boca Burgers and Salad
Tuesday is Mediterranean Flounder, with tomatoes and beans
Wednesday is Grilled Steak, Salad and potato
Thursday is Grilled Chicken, edamame, and Brown Rice
Friday is Dinner with Friends with Crab Cakes
 
Sun - Smothered and Covered Hash browns with a soft fried egg on top (perfect clean out the fridge item:), Blueberries
Mon - Veal and Pork Meatloaf, Corn on the Cob, Strawberries
Tues - Lunchmeat sandwiches, Chips, Persian Cucumber Salad
Wed - Cheese Ravioli, Pomegranite Seeds, Salad
Thurs - Steak and Peppers Fajitas, Chips and Salsa, Apple Slices
Fri - Cheese Pizza, Leftover Fruit
Sat - Out
 
We make a list weekly and then decide the night before what we'll be having the next night. I always leave one night open for leftovers or fend for yourself nights.

Open faced tacos-just refried beans and cheese on split taco shells toasted in the oven with different toppings.

Spaghetti-using spaghetti squash as noodles, garlic bread and salad

Pork Chops-Not sure how i'll cook these yet but it'll be served with homemade potatoe salad

Chicken and Cabbage soup-spin off of chicken noodle only you replace the noodles with cabbage and potatoes.
 


Tonight: Steak, twice baked potatoes, onion rings

Monday: Something from the freezer

Tuesday: Baked penne with sausage

Wednesday: Leftovers
 
Tonight: Chinese duck noodle soup and onion pancakes
Monday: Whatever DS asks for (in or out--it's his birthday).
Tuesday: Sticky ribs, beans, baked potato
Wednesday: Spaghetti and salad
Thursday: Chicken and dumplings
Friday: leftovers

Tues-Thurs are items I have already made in my freezer. I'm trying a new thing--freezing leftovers instead of eating them the same week. We've been throwing too much food away since I often cook 4-6 portions and there are only 2 of us.
 
My mom was in town for the weekend and we had an early dinner at Applebee's (she treated, WOOT!)

Mon - Meatball subs and pasta salad

Tues - Crockpot white bean chicken chili

Wed - Dance, quick dinner out

Thur - Valentines Day -- Homemade fettuccine Alfredo with grilled chicken, salad and fresh bread

Fri - Chili dogs and ? (tator tots or mac & cheese)

Sat & Sun - going to moms

Mon - Spaghetti

Tues - breakfast burritos and hashbrowns

Wed - chicken bacon cheddar fajitas, Spanish rice
 


Mom_Rides, I would love to know your recipe (or any other DISers!) for crockpot white bean chicken chili.

I'm also looking for suggestions for what to do with ricotta cheese that isn't Italian or dessert. Any ideas appreciated!!

Have fun at Gaga! My friend was at the concert last night, in Canada. She said it was amazing.

I thought the Monsters Ball tour was the best concert I ever saw so I am sure she won't disappoint me like Madonna did:rotfl:

How about stuffed french toast with the ricotta? You could sweeten it up with some confectioners sugar and use Texas toast.
 
I am so excited to be posting this from my new nook. A birthday gift from my mom today.

Yesterday we had leftovers and tonight is london broil with corn pudding and salad for my birthday.

This is the recipe I use. I just toss it all in the crock and let it cook all day. Super yummy! And the author is a pretty cool lady too!
 
Can anyone give me any ideas what to do with leftover whole chicken that was oven cooked?
 
An easy go-to with leftover roasted chicken.

Grab any jar of Indian sauce (Tikka Masala, Korma, Jalfrezi, etc), add 1/2 can of peas and/or chickpeas (or any roasted/steamed/canned veggies you like - sweet potatoes, white potatoes, carrots, tomatoes all work well) and serve with some rice. Dinner done in about the time it takes to cook rice and really, really easy, good, and different (ie - no one knows it's leftover:)...
 
leftover chicken makes a great stirfry! Chicken tacos, chicken soup, hot chicken sandwiches or chicken and gravy over rice.. LOVE leftover chicken...

well late this week so I'll post from today on.. it's Hubs, DS and myself

Wed - Perdue chicken strips & honey BBQ chuncks, Garlic shells and Green beans
Thursday - Omaha burgers, tator tots
Friday - out for valentines dinner after the HS Ice Hockey game.. Go BE
Saturday - garlic bread pizza
Sunday - lemon garlic pepper pork loin, rice and green beans
 
Things changed this week. Monday we ended up having a large lunch out, so we snacked for dinner.

Yesterday we had frozen meals.

Tonight is baked ham and cheese with tomato soup.
 
I don't think I made a menu this week. We are 9 nights away from Disney departure day so next week will be using up what is left in the fridge and freezer. The boys are gone for a basketball tournament this weekend so I won't be cooking much for dd and I.

Next few days as I am going to have to make this up as I go along...

Thursday.. Turkey soup for Dh and I with salad. Cheese Pizza and salad for the kids

Friday... Something quick before they leave. Maybe chicken wraps.

Saturday.. fend for yourself

Sunday.. out for most of the day so probably subs.

Monday.. Spaghetti Pie and veggies

Tuesday.. Breakfast for dinner

Wednesday.. Chicken Burgers, Potato, Salad

Thursday .. Butternut Squash Soup, Salad and Multigrain rolls

Friday.. DISNEY and no more cooking for 10 days:cool1:
