Need Recipe for NO Mayo Potato Salad

I'm having a hard time finding a potato salad recipe that doesn't contain mayonnaise. I like mayo, but it doesn't agree with my stomach. Does anyone have a recipe they've tried and liked?
 
No specific recipe for you to try, but look for a recipe for "German potato salad". It is made with a vinegar base, rather than a mayo base. Plus is usually has bacon, which, as we all know, makes everything better.

My step-father has an awesome German potato salad recipe that I love, but DS won't eat it. He says the warm, sweet 'n sour taste is gross. :sad2:

I have one that uses red potatoes, bacon, green onions and ranch dressing . I can posted for you if you want.
That sounds really good. Unfortunately, ranch dressing doesn't like my stomach either.
 


There are many recipes out there for potato salad out there that use yogurt in place of the mayo. I made one for years (which was delicious) out of the Recipes for a Small Planet cook book. Just google "potato salad with yogurt" and you will get a lot of ideas. It substitutes beautifully.
 
I would like to try one with some kind of vinaigrette, instead of a creamy base. I was hoping someone had a tried and true recipe.

No offense, but MW disagrees with my tastebuds. :rotfl: But seriously, it probably wouldn't be good for my stomach either.

We used to serve one (purchased form a vendor) where I worked that was red potatoes, onion, parsley and sliced almonds with a yogurt dressing that was awesome.
 
A simple one that my DH loves:


1. Boil potatoes and slice

2. Sautee finely chopped garlic in olive oil until soft

3. pour over potatoes

4. add chopped red onion, fresh basil, parsely, salt, pepper, vinegar (red or white), sliced black olives

5. mix all together.

It tastes better when room temperature and not super cold.

lol...I understand your distaste of miracle whip. That's just how my Mother always made it, and my potato salad is the one always requested at get togethers

have to agree with you on my 'eye candy'..it always makes me smile too!
