Good ground chicken recipe?

I got a great deal on ground chicken and need a good recipe that my family won't figure out is ground chicken instead of beef or they won't eat it!

My picky family ALWAYS knew and were not fans. However, my most successful try was spaghetti. Everyone likes that and the strong flavors helped a little bit.

I don't use ground chicken, but do often use ground turkey. Meatballs in tomato sauce is good, hard to tell what meat it is. A "quick" (that is not cooked all day like a real chili) pan chili made with turkey is acceptable to my family, chicken would probably work too.

My family are not fans of ground chicken (I don't mind it but my fam would never eat it). We do like ground turkey. I usually make meatballs for spaghetti with my turkey or I take those same raw meatballs and then make a spanish stew called albondigas. It's a stew that starts with sofrito (this recipe is the closest I've seen to how I make my sofrito, we usually leave out the green peppers because my mother hates them) and once you have that made I add 1-2 cups of chicken broth and place the meatballs in the pot to cook through. Once they are done the sauce will be thick and delish! We eat it with white rice and either fried green plantains (tostones) which are crunchy or fried ripe plantains (maduros) which are softer and sweet.

I think I'd try something like enchiladas. I wouldn't try to bill it as beef though.

Mix it, half-and-half, with beef and I can't taste the difference at all.

Tacos or Chili are good options for ground meat. The spices always overwhelm the actual taste of the meat.

My DS found these on The Chew. They were enjoyed by everyone!

Chicken Parm Meatloaf was good too: http://joelens.blogspot.com/2010/06/chicken-parmesan-meatloaf.html

You can add in some sausage seasonings and make it into sausage. If they don't like the flavor then you need stronger flavors to overpower it. Italian is a good way. You could use to make enchiladas too. I simmer the meat in a little enchilada sauce to add flavor.

I doubt you'll be able to fool them. You might be smart to mix it half and half with beef, at least the first few times you feed it to them.

You might have to use a gun.

Can you mix the ground chicken with ground beef? That might cover it up more. The color is going to give it away tho.

ANyways - Tacos would be a good bet for me.

Due to a stomach issue I have to watch my fat intake. I prefer ground chicken oven ground turkey as the chicken really doesn't have much of a flavor. I actually mix it with 2 parts chicken to one part ground beef I also mix in a bit of low sodium beef bullion and although I have never tried to pass it as beef no one seems to notice. I use it in casseroles and chili and even at pot lucks no one seems to notice. The dishes always come back empty.

Since discovering that kidney beans help lower cholesterol AND since DH (whose had cardiac bypass surgery) won't eat red meat, I cook kidney beans seasoned with yellow onions, fresh garlic, sea salt and pepper and put the chicken in about 30-40 minutes before the beans are ready. I don't brown it first. Even my DD9 likes. The beans will also darken the meat.

I love asian lettuse wraps. My kids love it. And it is easy to make. If you want the recipe you can send me a PM. I will be happy to share.

Chili. You can make white chili, or regular old chili.

Sloppy joes - once it's covered in red goo, would you be able to tell the difference?

My favorite to do with ground chicken is make lettuce wraps (like someone else said.). I just brown the meat and put this sauce on. I get it at Kroger or meijer in near the Ramen noodles and Asian type foods.

Wrap meat in lettuce leaves (I use romaine) with chow mein noodles and bean sprouts. mmmm! Serve with fried rice as a side.
