My DS had two LAX games tonight followed by a party with HIGH SCHOOL GIRLS!!! He scored 8 times in the game and hopefully ZERO at the party! :)

So, we had our salmon for lunch & Japanese takeout for dinner.

I start back up teaching our children's performance choir tomorrow morning at church. Getting ready for Christmas!!!! :yay: SO, I'm seeing sandwiches or takeout in our future... ;)

....give it a try - I really think you'll like it....also: you might wanna substitue shrimp for the chicken, so your DH can eat it too....

Fish Cakes




My starting ingredients:

For fish cake:

  • White Fish, 500 g
  • Potatoes, 400 g – boiled for about 20 minutes
  • Onion, 1 – finely diced
  • Carrot, 1 – finely diced
  • Dill, 1 bunch – diced
  • Butter, about 1 tablespoon
  • Salt and Pepper to taste
  • Oil


Fish cake coating/breading:

  • Flour, seasoned with turmeric, paprika, salt and pepper
  • Egg, 1
  • Breadcrumbs



Gently fry the onion in a pan. You’ll note that I used a pot.

After 1 – 2 minutes, add the carrot and cook for a further 2 minutes.

Transfer the vegetables to a bowl with the potatoes.

Season with salt, pepper and the butter. Mix the vegetables together. I used a fork so that I would have lumpy potato bits.

Because I’m a fairly lazy cook, I used the same pot that I used to fry the veg in for this next step.
Add about ½ cup water to the pot and place the fish inside.

Gently poach on a low simmer for about 3 – 4 minutes, or until the fish is just cooked.

Flake the poached fish into the vegetable mix.

Chop the dill finely….

…and add to the mix. Combine all ingredients and refrigerate for about 2 hours.

Form equal sized balls from the mixture. I made about 9.

Mix the flour with the paprika, turmeric, salt and pepper. You could add any spice you like (or none at all); but these were what I reached for in my pantry.

Flatten each ball to form a pattie and coat with the flour.

Dip in the beaten egg….

…and then coat with the breadcrumbs.

Continue coating until finished.

Heat some oil in a pan on low/medium heat.

Fry for about 2 – 3 minutes on each side.

I was serving these with some oven wedges; so I placed the fish cakes in the oven to keep warm. The breading turned out softer than I wanted. Next time, I will cook on low heat on the stove for about 4 - 5 minutes on each side.

NOTE: The fish cake mix was a little soft for my liking. Next time, I’m going to add ½ - 1 cup of breadcrumbs to the mix before coating it. It might firm up the pattie somewhat.

PIO the fish cakes look awesome..... I have no made fish cakes in a very long time. We make Crab Cakes often, but we have some great seafood options here being here on the bay, but we seem to just grill it alot.

I made salmon patties for lunch!!!! They turned out so good my DS10 ate 5!!!!! :)
