The What's for Dinner Thread- June 2012 (recipe index in OP)

It's Wednesday night here. Dinner at mum's. About the only bright spot over the last 2 days. I've been sleeping lots and taking it easy. This cough is not going away and I'm just so over it! I'll be heading over to pick up doggie bags for DS, DH and myself. We're in a very busy period at work, home and life.

Marilyn - Nice to see you on this thread again. How is your godson? I hope that the leg is okay.
Bacon scented candles would drive me crazy. I would want to EAT bacon all the time! :laughing:

Yes they did. :woohoo: Not sure how the leg is, I haven't heard from his mom yet today. He want yesterday for an MRI then the Dr. decided he needed another view so they had to go back at 7 last night.

Need to get back into cooking now that things have calmed down. Last night I got a calzone from Wegman's.
 
We put up 5 quarts of Salsa this past weekend, and here are the pictures...

Peppers were washed then chopped and placed into the pan

Along with dehydrated garlic, onion, salt, and pepper

At least it does not contain nuts, so no nut allergies can be blamed..
 
Dinner tonight will be at 8:30 or 9... As soon as DS13 get home from his football game...

Chicken cordon blue (from a box, frozen)
Corn from the farmers market
Salad from a bag
And some frozen yeast rolls.

Don't judge me...

Almost every other night is fish! :lmao:

I buy the frozen ones - usually tilapia or salmon, stick it in a baggie with Italian dressing overnight, then grill it outside. So easy even I can do it!!! :)

Ann - Your rosemary chicken dinner sounds delicious! Recipe?

This recipe is so easy and every one loves it. I sometimes roast more than one and use the chicken for salads, tacos anything I can come up with.

Roasted Rosemary Chicken

Ingredients
1 (3 pound) whole chicken, rinsed & cleaned
Sea Salt & Fresh ground pepper
2 fresh lemons (cut in half or quartered)
1 small onion, quartered
Garlic cloves (to taste)
1/4 cup chopped fresh rosemary
1 Tablespoon very finely chopped fresh rosemary (for outside of chicken)
Olive oil
1 cup Chicken stock

Directions
Preheat oven to 350 degrees F (175 degrees C).
I cook mine in a roasting pan with a rack to have a crispy bottom. Rinse chicken and clean, then season inside chicken with salt and pepper to taste. Stuff cavity with the onion, lemons, garlic and rosemary. Place chicken in roasting pan or a 9x13 inch baking dish.
Rub outside with olive oil and sprinkle with garlic, finely chopped rosemary, salt and pepper. Pour chicken stock in bottom of pan and cover. Basting as necessary.

Roast in the preheated oven for 2 to 2 1/2 hours, or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of the bird. Remove lid of pan and let brown. Be sure to let the chicken rest for about 15 minutes prior to carving.

I sometime add potatoes, carrots, and/or other veggies to the bottom of the pan and place the chicken on top. Wonderful moist chicken with whole dinner in pan.

WFDT - Left over pizza, homemade baked chicken fingers, salad and wine
 
Tonight we had sauerkraut and fried hot dogs. Buddy's pick. I also made a chocolate pudding cake

1 box chocolate cake mix
1 box cook and serve chocolate pudding
2 cups milk
3 eggs
1 bag chocolate chips

Cook pudding and milk according to directions
put cake mix and eggs in bowl, add chocolate pudding and mix until smooth
13*9 in pan
top with chocolate chips

350 for about 25 minutes

My Mom used to make this, I make it when I miss her

How sweet :hug: I do the same thing...in fact my mom died today several years ago. I need to make a Red Velvet Cake from scratch. ::yes:: She use to call it The $200.00 Red Cake. Used Swans Down flour. Ahhh memories!

As far as the manicotti, I actually used the recipe on the Barilla Pasta boxes. I think it was to saute mushrooms, onions and spinach and add ricotta.

As far as the cannelloni, I mixed beef, mild italian sausage, mozzarella grated and then stuffed it inside the pasta tubes. I used a red sauce on top and baked it with some provolone put on in the last 5-10 minutes. As far as the sauce it depends on how tired I am whether I actually make it from scratch or just "nanatize" and jarred sauce.

WFDT? Surprisingly, I have some chicken maryland defrosting on the sink at the mo'. So, it might be a version of Ann's Rosemary recipe. I normally do a similar thing for roast chicken; only I use tarragon instead of rosemary. But as I have rosemary growing in my garden and no tarragon, looks like it will be a rosemary chicken meal tonight.

DH will be getting something with shrimp for dinner. I might go take a look at Brandi's shrimp recipe and figure out if I have most of the ingredients in my pantry or not.

I often eat Chicken Cordon Bleu from the bos, if it's the same one, it's pretty good and easy! :thumbsup2 Sometimes I get the one stuffed with broccoli and call it that I have both my protein AND vegetable! You have gone above and beyond the call of duty for a balanced meal!
