Angry Mussels with Smoked Bacon​



Ingredients

2 pounds mussels
¼ of a red onion (chopped) [1 or 2 slices]
3 oz. good smoked bacon (diced)
3 cloves fresh garlic (chopped)
1 or 2 poblano peppers (sliced)
1/2 cup dry white wine
1 teaspoon sea salt
1 stick of butter [cut into 4 or 5 pieces]
1 T. chopped parsley




Using a large skillet, render bacon until it begins to crisp (medium-high heat). Add the garlic, onion and poblano. Cook for 2 to 4 minutes, and add the cleaned mussels. Stir occasionally, until they start to open. Lower heat and deglaze with the wine, and cook until the wine is almost dry, keeping mussels covered. Add the butter, and keep stirring until the butter is completely melted and take off of the heat. Season with kosher salt, and finish with freshly cut parsley. Serve with crusty garlic bread for dipping!!

I've been buried under tons of stuff this week. Today we are closing down our internet store. I can't seem to figure out how to make the website invisible. That's OK. No one really places orders anyways. Next week, I will give the employees their last paycheck and severance pay. Then we will have to box up all the music and work on selling it ourselves on eBay. At least we get to keep all the money. Of course we have to do all the work too!

Dinner will probably be frozen shrimp scampi over pasta, with some kind of frozen veggie.

No? Really? We can help. Cooking is really not that hard. Unfortunately with all the awful wou.d stuff.i can't cook.wonderful stiff like I.want to but everyone here has some great recipies than are tasty and easy. Believe it or not Kimmar is actually quite an awesome cook!

Last night for dinner was Shrimp and Grits...

Ingredients:
2 cups water
14 1/2 ounce chicken broth
3/4 cup half-and-half
3/4 teaspoon salt
1 cup regular grits (I used quick grits and they were fine)
3/4 cup shredded cheddar cheese
1/4 cup grated parmesan cheese
2 tablespoons butter
1/2 teaspoon Tabasco sauce
1/4 teaspoon white pepper
3 slices bacon
1 lb medium shrimp, peeled and deveined
1/4 teaspoon black pepper
1/8 teaspoon salt
1/4 cup flour
1/2 cup sliced green onion
2 cloves garlic, minced
1/2 cup chicken broth
2 tablespoons fresh lemon juice
1/4 teaspoon Tabasco sauce
lemon wedge

Directions:

Bring first 4 ingredients to a boil in a medium saucepan; gradually whisk in grits; reduce heat and simmer, stirring occasionally, 10 minutes or until thickened; add cheddar cheese and next 4 ingredients; set aside but keep warm.

Cook bacon in a large skillet until crisp; remove bacon and drain on paper towels, reserve 1 tablespoon of drippings in skillet; crumble bacon and set aside.

Sprinkle shrimp with pepper and salt; dredge in flour.

Add green onions and saute 2 minutes; add shrimp and garlic and saute 2 minutes or until shrimp are lightly brown; stir in chicken broth, lemon juice and hot sauce and cook 2 more minutes, stirring to loosen browned bits from skillet.

Divide grits into 4 large, shallow soup bowls; divide shrimp mixture into four servings and place on top of grits; top each serving with crumbled bacon and serve with lemon wedges.

The grits are so creamy and rich with all the cheese and butter, they are a wonderful meal by themselves and then the shrimp are just tender and sweet....

oooh that looks so good....unfortunately I don't think my family would eat it! such picky eaters!

and that looks like its my calorie content for the entire week! BUT WOW!! Kudos!! that looks fantastic.
 
Simple Loafs - Salmon and Meat




My starting ingredients:

Common ingredients for the two loaves.....
  • Onion, 2 - diced
  • Celery, 4 stalks - diced
  • Carrot, 2 - diced
  • Parsley - diced
  • Chives, 1 bunch - diced
  • Breadcrumbs, 1 cup per loaf type
  • Eggs, 1 egg per loaf type
  • Tomato paste, 1 tablespoon per loaf type
  • Salt and Pepper to taste
  • Oil, 2 tablespoon


Proteins used.....
  • Salmon, red - tinned. Drain and remove any bones


  • Minced beef, 500 g
  • Barbeque sauce, 1/4 cup






Place the oil and onions in a pan and fry until translucent.

Add the celery and carrots and fry for another 2 - 3 minutes. I didn't have as much carrots as I wanted in my fridge. So I just used up what I had.

For the Salmon Loaf


Add about half of the fried vegetable mix to the drained salmon; together with 1 cup breadcrumbs, egg and tomato paste, parsley and chives.

Season with salt and pepper and mix all ingredients together.

Place the mixture into a loaf tin. I've used two small tins for the salmon but you can put it all into the one tin.

Refrigerate for at least 3 - 4 hours and turn out the loaf into a baking tray. The loaf will hold its shape.

Bake at 180 C (360 F) for 50 minutes.

You could bake the salmon in the tin if you wanted; but the sides won't be golden or crusty.







For the Meat Loaf


Add the rest of the fried vegetable mix to the mince; together with 1 cup breadcrumbs, egg and tomato paste, parsley and chives.

Season with salt and pepper and mix all ingredients together.

Place the ingredients into a loaf tin.

I did refrigerate the tin for about 3 - 4 hours; only because I had prepared it at the same time as the salmon loaf. But you could cook this straight away.



Bake at 180 C (360 F) for 60 minutes. Remove from the oven and transfer to a oven-proof serving dish. Place the barbeque sauce over the top of the loaf and return to the oven for a further 15 minutes.

Been awhile since I've been here. Crazy busy at work but thankfully we are past that and things should quiet down starting this week.

....needs meat, preferably bacon. popcorn::

I had an interesting thought, bacon scented candles. :goodvibes

So football started Friday night, they won! :cheer2: And my godson got a touchdown. :cheer2: And then he got hurt. :headache: But the xray came back with no visible break in his lower leg and the ortho says it is presenting as a stress fracture however he has things he can do to it that will let it heal and he could possibly still play. He has to have an MRI tomorrow and then we'll see.

Going to my cousins today, maybe as it is supposed to rain all day today.
