The What's for Dinner Thread- June 2012 (recipe index in OP)

Last night was cheese burgers, chips and dip
tonight - crab cakes (going to a friends house)
Monday - cheese enchiladas, refried black beans
Tuesday - Chicken Salad
Wednesday - Serbian Ground Beef, Salad
Thursday - Aussie Chicken, Salad
Friday - Grilled Salmon, Brown Rice

I actually put together a plan for the next couple weeks:

Sun (tonight): Pork Chops, Stuffing & Gravy with whatever veggie looks good at the store
Mon - 7/30: Pulled Pork & cole slaw wraps
Tues - 7/31: Drive through on our way to band
Wed 8/1: Beef Ribs, Corn Cole Slaw
Thurs 8/2: Turkey a la King
Fri 8/3: Frozen Breaded Cod Fillets, Tater Tots, Cole Slaw
Sat 8/4: Tacos
Sun 8/5: Prime Rib, Mashed Potates, Green Beans
Mon 8/6: John Wayne Casserole
Tues 8/7: Drive through on our way to band
Wed 8/8: Greek Meatballs, Noodles, Green Beans
Thurs 8/9: Chicken Florentine
Fri 8/10: Carthay Circle Restaurant
Sat 8/11: Stuffed Peppers in our VGC Villa
Sun 8/12: Keilbasa & Mac n Cheese in our VGC Villa
Mon 8/13: Out!
Tues 8/14: Drive through on our way to band

We'll see how closely I stick to this schedule, but everything but the fresh vegetables is helping to clear out our freezer. Most of them are jam packed full. With all the drama I have not been cooking our Turkeys, Hams, Prime Ribs and Corned Beef. Come the fall, it will be another Cookapalooza!!!!
 


Since I don't think I posted it on this thread, after a long hospital stuff, we had them reove the tube from Arline last night and she did pass away.

So now to deal with the stuff on this thread, see my other posts.

Thanks ladies, it's very strange, a few weeks ago she was vibrant and full of life. It was hard to see her all hooked up to those tubes. Hopefully she is at peace now.
 


Ingredients

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
2 teaspoons seasoning salt
6 slices bacon, cut in half
1/2 cup prepared yellow mustard
1/2 cup honey
1/4 cup light corn syrup
1/4 cup mayonnaise
1 tablespoon dried onion flakes
1 tablespoon vegetable oil
1 cup sliced fresh mushrooms
2 cups shredded Colby-Monterey Jack cheese
2 tablespoons chopped fresh parsley

Directions

Rub the chicken breasts with the seasoning salt, cover and refrigerate for 30 minutes.
Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until crisp. Set aside.
In a medium bowl, combine the mustard, honey, corn syrup, mayonnaise and dried onion flakes. Remove half of sauce, cover and refrigerate to serve later.
Heat oil in a large skillet over medium heat. Place the breasts in the skillet and saute for 3 to 5 minutes per side, or until browned. Remove from skillet and place the breasts into a 9x13 inch baking dish. Apply the honey mustard sauce to each breast, then layer each breast with mushrooms and bacon. Sprinkle top with shredded cheese.
Bake in preheated oven for 15 minutes, or until cheese is melted and chicken juices run clear. Garnish with parsley and serve with the reserved honey mustard sauce.

Weekend was long however not long enough. Raced to my Dsis's house Friday night so I wouldn't miss the Olympic's opening, got there just in time. Went to bed late because of that then up by 4:45am to head out to the pool for the big end of season swim meet. That lasted until after 1 then I had to bring my youngest DN home so she could get ready for her karate demo and "graduation" ceremony, she was getting her green belt, which was from 2:30 till almost 5. I was trying not to doze off sitting in the nice comfy chair in the corner of the karate place.

The rest of the evening was spent on the couch with my oldest DN, we watched to Olympics together, that is until she decided I wasn't as good as her father at rubbing her feet for her. :rotfl:

Yesterday I helped my Dsis get ready for the swimming banquet before I headed home where I laid on the couch for the rest of the day again.

Brandi- I am sorry for your loss as well. I'm sorry so many of us are experiencing this. My thoughts and prayers are with you all.

Morning, everyone! Today we are having leftover chicken soup for dinner. I'm actually make us soup and sandwiches so stretch the soup a little bit :) Mmmm, comfort food!

I hope everyone is safe today. There's some bad weather floating around. Also, say a little prayer for me. I am meeting Amanda at McDonald's to watch Ryan while she goes to the doctor and gets the tubes removed from her nose. I need some strength, lol!

I'm doing the Domestic Princess thing tonight.

Happy Birthday to my DS, who will turn 12 tomorrow. I know some of you might have kids older than 12....but really...where does the time go? It seems like yesterday that I was in the delivery ward.

So, I'm up to my armpits in cupcakes and butter frosting.


And if that isn't enough, I'm having an American Disser and his family come round for dinner on Thursday night. And I'm cooking an Asian meal....I'm starting the preparations with the beef ribs marinated in Soya, garlic, spring onions and sugar. The beef has been marinating over the last 48 hours and I can cook it in a slow oven tonight. I can reheat it in the oven again on Thursday night.
Hoping for some decent food porn from this meal.

I'll also make that Prawn Sambal that I shared some time ago. Stir fry some veg and I'm also tossing up making a sweet and sour chicken tenderloin.
