WFDT? We're having pumpkin soup tonight. I cooked about 2 kg worth of pumpkin. Whatever is leftover, I'll freeze so that we have something that we can thaw out and have for those just-in-case nights.
 
....tell me about it - mother of 3 grown sons, all over the age of 18, plus a DH AND a 60-lb furbaby....talk about expensive! And, my DH has Celiac so GF stuff is, like, TRIPLE the price of 'regular' stuff....:faint:

I do usually try to make things that have less meat but we got a great deal on the pork chops. Right now my DS14 is supposed to be eating a lot of meat plus drinking protein shakes. He has grown 8 inches in the past year but has only gained 10 lbs. he has to gain weight. He ate four pork hops last night.

I would add some quinoa to meals. It is a complete food that is high in protein. I also like adding beans to dishes.

We will he to try that! We just got back from the dr a he may have a stress fracture in his back. Will know after ct scan. He is so thin, easily hurt it seems.

Last night we went to dinner at Max Burger. Anna got some bad news, she was not awarded a position she had applied for.It was down to two of them and she had been waiting two weeks to find this out. :( Marisa and I asked her to go out for dinner and Donny joined us. My niece is working there, it just opened on Monday. The food was really good! I got some tempura onion rings that were delicious and we ordered some pulled pork spring rolls that I could have turned into my entree. The sauce for the spring rolls was like cole slaw that has been processes finely with ranch dressing. We also ordered chicken cordon blue balls with some sort of honey mustard sauce. YUM!!!!!!!!!!!!

We each ordered dessert but should not have. No one could finish it so next time I think we would order one to share.

The weather is going to be :scared: today so after I run all my errands I am going to make a casserole of some sort. I really have to start cooking. Buddy likes sandwiches but Holy Lazy!!!!!!!!!!!!!! I have been making him live on them!
 
Nancy - I hope that Anna gets good news with the next job! Sorry that she missed out this time.
 
There have been so many changes where she works and they are not that good for employees. She is not sure she wants the other position she interviewed for. She really did not like the manager. The one she was passed over for, that manager went to the hiring manager and told her that Anna was a perfect fit.

dismom ~ That is so scary about your DS. I pray that the CT shows no such thing and all is well.

PIO ~ I didn't do anything special with my squash. I cut them both thin and steamed them. The potatoes I boiled and put butter and fresh parsley over them. I used the onions with the potatoes. Oh my it tasted oh so good.

Nan ~ I am so sorry for Anna. That is just the pits. Hopefully she will find the perfect job soon.
Poor Buddy (I say that with tongue in cheek ;)) I am sure he is really enjoying it. Stay cool today it is to be hot hot hot there.

Same thing just a different day here. The weather has cooled off some but still no rain. It did rain, but it was everywhere but here. We were told yesterday that our County in Nebraska had been deemed ......"This hot, dry weather has caused the entire state of Nebraska to be labeled a drought, with Dawson County having severe conditions according to the National Climatic Data Center map" Quoted from our newspaper. We are to cool off today to in the 90's. That will be such a relief.

I LOVE roasted beets! :yay:

Dinner tonight will be the turkey meatloaf from last night. Had to go to the fabric store to pick up stuff for a quilt and didn't get home until late so I stopped and got Qdoba.

Yesterday at the park I got a call that her oxygen was low. They called 911 and she went back to the hospital. Turns out she had fluid in her lungs, a bladder infection and she had a stroke in the front of her brain. We saw her yesterday afternoon and when we left she was getting ICU level care in the ER. They were short beds, so who knows if she's been placed by now.

We're getting ready to check out of the hotel this morning. I found a way to get in some fun yesterday despite the hospital visit, so today I'm too tired to do anything but a little shopping for a friend. ;) once we check out.

No the too tired part was that I was not up for getting in line for RSR at 7AM. We were out of the room by 10:30AM (a record for us on DVC checkout! :rotfl:) We couldn't pass up shopping! :rotfl2:

I managed to get a little cooking in over the weekend; albeit of the quick and cheerful type. But it is a step in the right direction.

A girlfriend and I went out to dinner on Friday night at an Indonesian cafe. We shared the Seafood Nasi Goreng...

..and something that was a warm vegetable salad with peanut sauce; and some pressed rice. It wasn't called Gado Gado; which is what you would normally expect the veg salad and peanut sauce to be called; but rather a Pecel Ketupat.

I made hamburgers for dinner on Saturday (no picture). Got the meat pattie from the market on Saturday morning. DH got some saganaki as substitute for the meat. Gosh - the halloumi was incredibly salty! I might have to soak it in water for a bit next time.


Last night, I made pasta two ways - one with marinara sauce and the other was carbonara. There has been quite a bit of bacon chat and posts on a couple of threads on the CB and it made me crave bacon.
