The What's for Dinner Thread- June 2012 (recipe index in OP)

I talked to him last night. He sounds good, but just really down. I don't think he is DEPRESSED but I feel like he is down and does not really have the heart right now.

He keeps saying all the right thins, but I think he is just saying them.

Brandi- :hug: I am so sorry that your Dad is going through this and that you cannot do everything that you want to do to help him. I know you want to be there for him but I would like to offer another perspective to think about.

People grieve differently for every loss that they experience. I am trying to put myself in your Dad's position and I figure we must be about the same age or so. Your Uncle was sick for a long time and the bond that your Dad had with him was a strong one. I imagine that your Dad was very conflicted about what he wanted for him and if he was anything like me he stopped knowing what to pray for. How do you ask Gad to take someone who is part of you? How do you ask God to spare him knowing that means more pain?

Your Dad may really be telling you that he is fine while he works this out for himself. He knows you are there and that you care and if you just keep keeping in touch that may be the best thing for a bit. I think that as much as I love my children and as much as I rely on them for companionship and for support in many things if I lost my brother or sister I might need to be my old sad self by myself for a bit.

Please trust him and your own instincts. You will know if you need to go to him because he will let you know just in what he says. If he is not depressed then I would trust what he is telling you. :hug:

You are right, about him during the end, I think he was praying that God was just go ahead and take him. But he did not want to let go.

He spent the last 6 weeks right there at his bedside and told me that he was not Timmy there in the end.

I don't envy your grocery bills. We had three kids and my DH nephew came to live with us. He was 16, took weight training and swimming in school and worked in a gym after school. My groceries were :faint:

Monday night we did the black beans and sweet potato burritos...

I soaked my beans, and then cooked them, and finally refried them..

Assembly was a whole wheat tortilla, layer of beans, layer of potatoes, and layer of cheese, folded up and pan fried to crisp up everything

Welcome! Ahhh football players! My BFF has three of them, two of whom are teenagers and when all three are home, her oldest is home from college for the summer, her grocery bill hits the roof. :scared1:

Dinner tonight is salmon, fried tomatoes and scalloped potatoes. :furious: My DM has dictated the sides tonight. She has taken to calling me up and telling me what sides I will be eating instead of asking. :sad2: She and I are going to have to have another "come to Jesus" meeting about this food situation.

Use a skillet with another heavy pan inside it to weigh down the sandwich... It will make it crispy, I do this all the time. Cast iron works the best.

....funny you should mention this. I did use a skillet, and then I put a round casserole dish on top of the sandwich to flatten it. OMG, it came out SOOOOOO good! :faint:

I was going to suggest wrapping a brick in tin foil and using that.

Your pork sounded really good too. I would like to make dinners. If only things would calm down, but the next three nights are O*U*T! :banana:

Now if I can only come up with something for tonight... :scratchin
 
Thanks for the welcome. It is hard feeding my group. My DH has diabetes , my DS16 is 6'3" and over 200lbs and works out twice a day. My DS14 has grown eight inches since last August. My DD13 tends to be on The heavy side. So I have to cook a lot but healthy.

I cooked 12 pork chops tonight and there are no leftovers. But they loved them. I breaded them in crushed ritz crackers and mixed in garlic salt. Wasn't the healthiest meal but it worked in a pinch

What kind of food does your family like to eat. I admit I have not been cooking as much as I used to but I have some good healthy recipes that are filling and yet will not break your budget. They are heart healthy and are made with whole unprocessed grain so the starch will not spike your DH diabetes. My whole family with the exception of my DH likes them.

Most are casserole type dishes.

Wednesday night and it was dinner at mum's tonight. We've been having scratchy meals lately...work has not calmed down. I guess I just have to adapt to the new work routine and pre-cooking meals at the weekend.

....tell me about it - mother of 3 grown sons, all over the age of 18, plus a DH AND a 60-lb furbaby....talk about expensive! And, my DH has Celiac so GF stuff is, like, TRIPLE the price of 'regular' stuff....:faint:

.....I find that the most expensive part of any meal is the meat bill, so I try to stretch it out by preparing things that you don't need to utilize as much meat. For instance, chicken quesadillas use less meat per person, so you can stretch it out that way. So does a stir-fry meal....hope this helps....

I do usually try to make things that have less meat but we got a great deal on the pork chops. Right now my DS14 is supposed to be eating a lot of meat plus drinking protein shakes. He has grown 8 inches in the past year but has only gained 10 lbs. he has to gain weight. He ate four pork hops last night.

Tonight all four kids are gone so DH and I are not cooking. Leftovers or sandwiches

One thing that was suggested to help my BFF's middle son gain weight was to wake him up in the middle of the night and have him eat a couple peanut butter and jelly sandwiches. Another parent on the team did that with his son and it worked. :thumbsup2

Dinner tonight will be turkey meatloaf, leftover scalloped potatoes and roasted beets, have to use them up before they shrivel up.
 
My Dads brother (my Uncle Timmy) lost his battle with Cancer. He has been fighting for 6 years and this last one was just too much for him. I know he is no longer suffering but my Dad is really taking it hard. This was his baby brother.

I was able to get to the Farmers Market last night and got some wonderful yellow squash, zuccini, new potatoes, garlic and onions. I went right home and cooked them all. Yea, Love meals like that!!

We will he to try that! We just got back from the dr a he may have a stress fracture in his back. Will know after ct scan. He is so thin, easily hurt it seems.
