The What's for Dinner Thread- June 2012 (recipe index in OP)

I think tonight we'll have Cannelloni and Manicotti.

Thank you everyone for all your kind words. It has been a whirlwind couple of days. They took Arline off the ventilator Friday and incredibly enough she started breathing on her own. She has started to improve (although ever so slightly), and was removed from hospice and placed into acute rehab. She will be forever in a nursing home if she does recover. I need a mini vacation. Thank god I have one planned this week.
 
Well I decided not go to Texas to be with my Dad, he has his wife and Sister there and if they need me they will call me and I will fly out. I was really unsure, but I have been talking to him and he seems to be ok. But then again he could just be acting strong for me. :sad:

Brandi- you will know if you need to go. :hug:

Dinner tonight is easy. Burgers and dogs :thumbsup2:thumbsup2 Marisa and I are back on our plan tomorrow so we are taking advantage of our last day. By watching my snacks you would think it is the Last Supper!

We are thinking of heading to the lake later and grilling when we get home. I am tired though. I was chatting with a co-worker of Buddy's on FB last night and she stopped in. She is about my niece's age and as cute as can be but Holy Moly! I had forgotten that these kids can stay awake much later than us old fogey's! She left after midnight and I had to tell Buddy that I was seeing two of her by then :rotfl:

I really like her, she was very depressed for a while. I guess a girl beat the daylights out of her over a boy and this happened while 6 of her "friends" watched. She turned to the gym and what a difference that made. She reminds me of Debbie. She is strong and competes in a lot of those Tough Mudder type challenges. Right now she is weight lifting. She says she sees that girl now and then but that for some reason the girl seems a bit scared of her now. :rolleyes1

Weekend ended up a little differently than planned. Had a headache and it was rainy on Saturday so I stayed in and did nothing. Sunday my sis and DN's came over, DN ended up in the finals again. I took her little sister and ran errands with her while my sis and other DN ate and rested at my house before they headed back to the pool.

Really didn't get anything done in the house and this coming weekend I am heading to my sisters.

Dinner tonight will be gnocchi with marinara, roasted beets and zucchini.

My guest room is not as big as an AKV One bedroom, but the company will make up for it!

We did have a nice weekend playing with all of our babies. They are such a joy.

My Dads brother (my Uncle Timmy) lost his battle with Cancer. He has been fighting for 6 years and this last one was just too much for him. I know he is no longer suffering but my Dad is really taking it hard. This was his baby brother.

Use a skillet with another heavy pan inside it to weigh down the sandwich... It will make it crispy, I do this all the time. Cast iron works the best.

....funny you should mention this. I did use a skillet, and then I put a round casserole dish on top of the sandwich to flatten it. OMG, it came out SOOOOOO good! :faint:

I talked to him last night. He sounds good, but just really down. I don't think he is DEPRESSED but I feel like he is down and does not really have the heart right now.

He keeps saying all the right thins, but I think he is just saying them.

....I think that the best thing that'll help him is to have loved ones around him as a support system....:hug:
