Never been on a cruise so I am not sure and DCL website doesn't specify, but how much luggage can you bring? It is like airlines? 1 checked and 1 carry on?

DCL will send 2 (checked) luggage tags per person in your cruise documents. You are NOT limited to 2. If you need additional tags, you can get them at the port.
You may have as many bags (checked/carryon) as you feel you need. You will need to store your luggage in your room for the duration of the cruise. And all your carryons, you will need to keep with you until the rooms are ready (about 1:30-2:00).

You've never been on a cruise and you booked a 15 day one? Wow, you are adventurous! I'm jealous because I tried to talk DH into that one. He said no.
Whatever you do, try not to over-pack. "Twice as much money and half as many clothes" applies to cruise vacations, too. I've been on 8 and STILL take too much. You will have plenty of time to do laundry (if you choose to) on that cruise so I would take advantage of that instead of packing a ton of stuff.

OK, we are well aware of what is printed by DCL. However, I've never seen them restrict the amount of luggage anyone can bring on board. As above, you are mailed 2 tags for checked luggage for each person in your party. However, the porters at the terminal, the Welcome Center at MCO, and the bellmen at WDW have additional tags and will happily provide you however many you require. They also do not limit the number of carry on items you may have.
With many things, there are written policies and enforced ones.
FWIW, I happened to be at Guest Services when Charo came on board in Barcelona with her 45 pieces of luggage! No kidding. I realize that she was an entertainer, not a guest...but she needed a cabin just for her luggage! It was all labeled with pink ribbons and tags that read X of 45!
