Cholesterol free desserts?

Anyone have any cookie or dessert recipes to share? I have high cholesterol so I need to be on a low cholesterol diet. Still need my sweets.
 
My father is low cholesterol too. I found these for him. They are called breakfast cookies but he eats them all the time to be honest.


Banana Oat Breakfast Cookie
Yield: 12 breakfast cookies
Prep: 20 mins
Bake: 14 mins to 16 mins 350°F per batch

Ingredients
Nonstick cooking spray
1 large banana, mashed (1/2 cup)
1/2 cup chunky natural peanut butter (unsalted and unsweetened) or regular chunky peanut butter
1/2 cup honey
1 teaspoon vanilla
1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup nonfat dry milk powder
2 teaspoons ground cinnamon
1/4 teaspoon baking soda
1 cup dried cranberries or raisins
Directions
Preheat oven to 350 degrees F. Lightly coat two cookie sheets with cooking spray; set aside. In a large bowl, stir together banana, peanut butter, honey, and vanilla. In a small bowl, combine oats, flour, milk powder, cinnamon, and baking soda. Stir the oat mixture into the banana mixture until combined. Stir in dried cranberries.
Using a 1/4-cup measure, drop mounds of dough 3 inches apart on prepared baking sheets. With a thin metal or small plastic spatula dipped in water, flatten and spread each mound of dough to a 2 3/4-inch round, about 1/2-inch thick. Once baked, each cookie will be about 3-1/2 to 4 inches in diameter.
Bake, one sheet at a time, for 14 to 16 minutes or until browned. Transfer to wire racks to cool completely. Store in an airtight container or resealable plastic bag for up to 3 days or freeze for up to 2 months; thaw before serving.

You probably could. I never thought to try. Will have to work on that.
 


I don't have the recipes on hand but here are a few things to look try:

Angel Food cake
meringues
Jell-O
rice krispie squares(use margarine, not butter)
 
There's an interesting book that you might want to read called "Wheat Belly" by Dr. William Davis, who is a cardiologist. I am currently listening to it on CD from the library and my goodness, is it eye opening. It's worked for my BIL and Sis - their cholesterol is under control without drugs :thumbsup2 My blood sugar and cholesterol went down after cutting out wheat (well, HDL went up, LDL went down). That said, I like to make baked apples. It's so simple that I don't have a real recipe for it. Slice up apples (skin and all) and put them in a casserole dish. One apple per serving, depending on how big the apple is (or how hungry you are!). Toss with cinnamon, and bake at 375 until apples are soft when pierced with a fork. Stir, let cool a little bit so you don't burn yourself, and devour. It's a yummy sweet treat that I make all the time!

lowfat or non fat frozen yogurt.
smoothies made with fruit, ice, and lowfat vanilla yogurt
 


Ginger crinkles

2/3 c vegetable oil
1 c sugar
1 egg (beaters)
1/2 tsp salt
1/4 c granulated sugar
1/4 c molassas
2 cup sifted flour
2 tsp baking soda
2 tsp ginger

Combine oil, sugar, egg, molassas. Sift flour, soda, salt and add to molassas mixture. Take tsp and shape into balls and dip in granulated sugar. Place balls 2 in apart and bake on ungreased pans at 350 for 10-12 minutes. Do not overbake.
 
Rice Pudding

Boil 3/4 c of rice to get starch-strain.

1 c sugar
1 c milk
1 tsp vanilla
2 eggs (beaters)

Put ingredients in a bowl, beat and set aside.

Add 3 cup milk and salt to rice in large pan. Heat, stirring, let simmer until thick (very). Add mixture stirring in well. Simmer again until thick. Pour into pan and let cool. Sprinkle with cinnamon and enjoy!

1 can pumpkin
4 eggs (beaters)
1 cup vegetable/canola oil
2/3 cup cold water
3 1/2 cups flour
3 cups sugar
2 tsp baking soda
1 1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon

Add wet ingredients to dry. Mix until smooth. Pour into 3 medium sized loaf pans. Bake at 350 1 hour or less.

1 can pumpkin
4 eggs (beaters)
1 cup vegetable/canola oil
2/3 cup cold water
3 1/2 cups flour
3 cups sugar
2 tsp baking soda
1 1/2 tsp salt
1 tsp nutmeg
1 tsp cinnamon

Add wet ingredients to dry. Mix until smooth. Pour into 3 medium sized loaf pans. Bake at 350 1 hour or less.

This sounds delish but i have a question. When something call for 4 eggs but I want to use egg beaters how do I measure that?

Pretty much any cookie recipe can be easily modified to be cholesterol-free. Use skim milk instead of whole milk.
Use egg whites or Egg Beaters instead of whole eggs.
Use butter substitute instead of butter.

If you want to further lower the fat content, use applesauce instead of oil.

Also, most recipes call for more sugar than necessary. Not a cholesterol issue, but just as a general health issue try decreasing the sugar by about 25%. You probably won't notice a difference and you'll have cut out some calories.
 
According to Eggbeaters.com -- 1/4 cup of Eggbeaters equals one whole egg.

This is correct, but I've found that it is best to scale it down a bit for recipes calling for multiple eggs. For example, if it calls for 4 eggs, you don't need a whole cup of Eggbeaters. It gets too wet if you do.

What is a good butter substitute? I despise margarine, seems so fake and chemical laden. Yuck!

We haven't used butter in our house for nearly 20 years. We used to use Country Crock spread and then switched to Brummel and Brown spread. We cook and bake with it all the time with no problems at all.
