Our server's suggestions were great at Palo too
We had Felice (on the Dream) and he suggested one dish from each catagory. We went with the lobster ravioli with truffle sauce for me and the rack of lamb for my DH. Both were great!! Felice even brought out an extra plate of the lobster ravioli as he knew I wouldn't want to share with my DH
Funny thing was when it came time for dessert we decided to go with something different (the chocolate pistachio cake) and Felice, for a second, gets a "deer in the headlights" kind of look. He never made a big deal or anything but we realized when the dessert arrived that it was a bit heavier and richer than we wanted. Neither of us finished it and honestly told him when he asked what we thought (good but too heavy).
Then I ordered the tiramasu coffee and Felice gets that same look
Sure enough, the drink comes and it is not what I expect. It is a layered coffee drink that is cold and served in a martini glass. The top layer is a flavored vodka and I quickly realize I have to mix this up if I'm going to drink it (Felice did warn me that the first sip was strong).
The drink was good, just not what I expected.
So...bottom line...ask the server for his/her suggestions-they know what the popular dishes are and can give you a more complete description than what is in the menu.

Does this work in the main dining halls too or just Palo? (and probably Remy, I assume, but I'm more concerned if I can do this in the main dining halls as well

Theoretically, you can order any dish any way you want in any dining area. The reality is that in the main dining room they have many more people to serve than in Palo or Remy. I have heard that they prefer that you order full size dishes (as many as you want) in the main dining rooms because that is just easier for them to get quickly from the kitchen
The main dining room is a bit hit and miss with servers. If you get an experienced one they can handle special requests easier than a newbie. The ones we had recently on the Dream ran their tails off just getting us the regular dishes. Not sure if they could handle any special requests
Palo and Remy have the more experienced servers and they are used to accomodating special requests. We wound up just going with the tasting menus on our June trip. Each dish is small in size, but we were full at the end anyway. I've heard that you can order as many dishes as you want, but then it takes them longer to prepare and serve and dinner can get long (3+ hours). We were out in less than 3 hours partly because we had an early seating (6 pm) and we stuck to the set tasting menu. They've also changed the Remy menu recently, keeping their most popular dish from the previous menu and making the others more appealing to a larger group.
