I figured we could use a thread to talk about craft beer and homebrewing with all the recent chatter over on DDC X. Here's a place to talk about your favorites brews, brewers and local gems. Plus we can share recipes, tips and answer general (or specific) questions about homebrewing.

Great thread idea. I have been making my own homemade ice cream, maybe it's time to get back into the family business.
 
So for those that drive to Disney, where's the local bottle shop? I'm specifically looking for anything from Cigar City Brewing. Any thoughts??

I don't make a lot of beer. But I have made a few batches. We have a place here called THE BREW KETTLE, and they kinda manage it for you, but are completely open to allowing you to create your own recipes.

If nothing else, the link above is a good read.

I have 40+ batches under my belt, which was skewed a lot towards the beginning. I don't think I've brewed anything or over 6 months. I have to get some thing going soon. I do mostly partial mash due to equipment constraints, but do group brews reasonably often that are always all grain.

I'm watching this thread with interest. I've almost gotten into home brewing a couple of times. The hold up usually ends up being some combination of equipment costs, concern about space for brewing equipment, and concerns about bottling.

Equipment cost, to start at an extract level, is roughly $200, including a "starter kit", first beer supplies, and a 20 qt brew kettle. Space wise, you need a corner in a cool, dark, spot in your basement, about 6' x 6' for your fermenter and cases of homebrew. Bottling isn't as daunting as it looks, just a PITA and time consuming. The biggest thing is to be diligent in your cleaning and sanitation. Pick up "How to Brew" by John Palmer, The complete Joy of Homebrewing by Charles Papazian, and Homebrewing for Dummies.

The real cost comes when you step up to all grain. You can make some really good beers using extract, so no reason to hurry to all grain.

Family business?? Beer or Bourbon?

I would love to brew my own bourbon. Having it age in the barrels - smells, tastes - but I have no idea how to even start that. Plus, I don't have a basement. Maybe I can age it in the living room.

Bourbon is a distilled product. Beer would be far simpler and legal.

Knightly Spirits, looks like the one I used to on Hiawasee has closed/moved. There is one just a few miles north it seems, do a google search and there is one just north of the kingdom, also a few off of 4.

Last time I was there, there was a Cigar City Release the next day, picked up Campeador, but they have there regular stuff too.
