You can sub in the meat:
Per 6 - 8 servings you need:
1 lb. ground beef
1 can Campbells Chicken Gumbo Soup
1 small can Contadina tomato paste
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
salt and pepper to taste
Brown ground beef. Combine all ingredients in a slow-cooker or large pan. This is best if it is allowed to cook all day in the slow cooker. Or, cook and combine and let sit overnight, then warm before serving.
I recently made this for a group of 35. I used a 5 lb chub of ground beef and corresponding amounts of the other ingredients. It filled one large and one small slow-cooker. There was plenty for everyone.
p.s. As you can tell, this is one of those recipe's from the 1950's when convenience foods were the big thing...with the canned ingredients here being the convenience. I grew up with this recipe...and have never found one I prefer. One thing I love about it is that it includes the veggies from the soup...making it a bit healthier and waaay tastier than recipes that just use mustard and catsup!
