What to bring to Potluck lunch at the office?

Sweet and Sour Keilbasa---Super easy!!!!

Ingredients--

Keilbasa
1 jar of Grape jelly
1 jar of Chili Sauce

Put in crock pot and cook. That simple and it is really, really good.
 
I do something similar to the above recipe only I use packaged frozen meatballs a can of cranberry sauce and the chili sauce with a tablespoon of dried minced onion thrown into the mix. Call them Cranberry meatballs.
 


Someone in our office made this earlier this year for our office potluck and so many people liked it, he gave out the recipe :)

It's basically a spicy version of potato salad.

5 lb. Idaho potatoes
5 eggs
1 medium sizedonion
1/2 jar Heinz Sweet relish
1 1/2 c. Hellmann's mayonnaise
2 tbsp. yellow mustard
1 tsp. salt
1 tsp. black pepper
1 tsp. garlic (I put more, depends on how much you like garlic!)
Cayenne Pepper (Again, no real guideline on this; depends on how spicy you like it, I put maybe 4 tablespoons!)
1 tbsp. parsley flakes
2 tbsp. paprika (I used Hot Hungarian Paprika if you can find it,some supermarkets carry it but regular will do just as fine)
2 tsp. onion powder

Boil potatoes until done. Hard boil the eggs and set them aside. Drain the water from the potatoes and put them in the freezer for 20/25 minutes to cool down. While they are in the freezer dice the onion in a very large bowl, add Cayenne pepper first, half the jar of Sweet Relish (or any pickled relish, I thought sweet would work well with the spice though), stir, add salt, pepper, onion powder, garlic salt. Peel potatoes, dice into small chunks and add, dice eggs and add. Stir/Mix well so its well mixed but still has some small potato chunks left. Add Mayonnaise and mustard, paprika and parsley. Stir well. Put in tray, make sure the reddish/brownish color looks evenly spread all over, cover with alumninum foil and leave in fridge to set overnight.
 
I also bring a nice fruit platter. Store bought or homemade. No need to keep warm.
 
This is delicious!


Hot Chicken Salad

3 cups cooked chicken diced

1 cup mayonnaise

2 cups celery, finely chopped

2 Tbls. grated onion

2 Tbls. lemon juice

½ cup chopped almonds, toasted

½ tsp. salt

1 tsp. Accent ( I use Mrs. Dash)

1 cup crushed potato chips

½ cup grated cheddar cheese


Mix well and turn into 11x7x1 inch baking dish. Top
with potato chips and cheese that have been combined. Bake at 450 degrees for 10 minutes and
Serve immediately. Serves 8-10

Little Smokies in Famous Dave's BBQ Sauce (or your fav sauce). Just bring everything still in the package and a slow cooker to work. Open them up at work - much easier to transport. Plug them in in the morning. Very popular around here and no matter how many I bring they are always gone by early afternoon.
 
We get the strangest things at our potlucks! Strange but super yummy!
One lady always brings cinnamon bread with cheesewhiz spread on it. ? It is yummy!
One of my favorite is the jello dessert with pretzel crust, it's a little time consuming but is all done ahead of time and tasty. Just google it.

Brocolli slaw or you could make Buffalo Chicken dip if you can take in a Crock Pot to keep it warm. A fruit tray is a great idea too, especially for people trying to eat healthy during the holidays or you could make an edible fruit arrangement if you have a lot of time!
 
Cheesy potatoes always go over well. Bake them ahead of time then keep them warm in a crockpot. I don't have the actual recipe but there are several similar versions out there.
 
I recently brought a divided dish with fresh pineapple and fresh strawberries. I also had bought some brie cheese and warmed it up until it soft. On top of the cheese I put some almonds I had already toasted. Sliced up a loaf of French bread and that was it. It was such a big hit. People still mention it-mabe because it was something different then what we usually have.
 
I had a teachers brunch to cook for 3 months ago. I had a whole bunch of ritz crackers and frozen chicken breasts and was looking for a recipe. I found this on the internet. It was super easy and everybody loved it. You can also use chicken from a store bought rotisserie chicken.

* 5 chicken breasts, boiled
* 2 cans cream of chicken soup
* 1 cup. sour cream
8 oz Monterrey Jack Cheese grated
1/4 cup water
* 4 cups ritz crackers (2 sleeves)
* 1 1/2 stick butter, melted
* 3 tbsp. poppy seeds

Instructions
1.Tear meat from boiled chicken breasts.
2.Coat a casserole dish with nonstick spray.
3.In a saucepan mix chicken, cream of mushroom soup, and water. Heat over medium until smooth. Remove from heat, stir in sour cream, cheese and 1 1/2 tbl of poppy seeds. Dump this mixture into the casserole dish and spread evenly.
4. Crush crackers and mix with melted butter. Spoon cracker mixture over chicken. Sprinkle the remaining poppy seeds on top.
5.Bake uncovered in a 350 degree oven for 30 minutes or until crackers are browned.

bread sticks coated w/cream cheese and a slice of genoa salami wrapped around! easy and so good!

This is what I bring to all the potlucks. It's always requested. I sub. the Chili Sauce for Ketchup. It's so easy even my DH can do it:laughing:
 
A coworker's wife brought this. It was sooo good! Only thing I changed is that I used butter instead of margarine.


cream cheese bars
2 (8 ounce) cans refrigerated crescent roll dough
2 (8 ounce) packages cream cheese
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup margarine, melted
1/4 cup white sugar
1 teaspoon ground cinnamon
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
Press one can of the crescent rolls into the bottom of the prepared pan. In a medium bowl, mix together the cream cheese, 1 cup of sugar, and vanilla until smooth and creamy. Spread over the crescent layer. Unroll the second can of crescent rolls and lay them on top of the cream cheese layer. Do not press down. Pour the melted margarine over the entire pan. Combine the remaining 1/4 cup of sugar and cinnamon; sprinkle over the top.
Bake for 25 to 30 minutes in the preheated oven, or until the top is crisp and golden.
 
I bring this wherever I go and everyone always loves it.
Pomegranate salad

Salad
2 heads romaine, torn into bite-size pieces
1 medium red onion, sliced
2 cups pomegranate seeds
Creamy Poppy Seed Dressing
1 cup mayonnaise or salad dressing
2/3 cup sugar
1/2 cup milk
1/4 cup white vinegar
2 tablespoons poppy seed

1. In large bowl, mix all salad ingredients.
2. In small bowl, mix all dressing ingredients until well blended. Pour over salad; toss to coat. Serve immediately.
 
.... what about a fancy rice dish? I like to make up a basmati rice but made with dried cranberries (and sometimes fried onions if the crowd is right). Very pretty and delicious with meatballs & sauce.

Fry 1/2 onion (diced or sliced) in 3-4 tbsp olive oil.
Add in dried cranberries (or raisins).
Add in desired amount of rice, stir everything up.
Add in correct amount of water & cook following package directions.

Turn into a tinfoil platter for serving, and you're off!

Another nice offering I've enjoyed is cranberry punch. Yummy.... so much work (I think) but punch always seems to make potlucks feel so much more festive.
