Maria--still very upset that you won't be joining us. I'm headed back down to wdw in January. Interested? Oh and I did get everything in a carry-on. I am such an over-packer that it was a challenge. I even had to "sneak" some liquids through security. ;) my quart bag was full and I couldn't leave my hair products at home. Yep, I'm pretty high maintenance. LOL!

Did you try someplace new? The last time I had Chinese food it made me so sick.

It is cold, rainy, windy and miserable here, so I never got to the store today either. Caili has skating this afternoon, so I am leaning toward takeout something.

Of course. I sent her a text last night & haven't heard back. I wonder if she doesn't have a U.S. plan. I don't have her last name or else I would have called her resort.

We decided not to go out last night because it was too cold, and plus I went shopping after work for clothes. I got 4 skirts, 4 sweaters (2 cashmere), and 3 tops for $200. I love Filene's Basement if you hit it when they get a new shipment!

I made breakfast for dinner. Laura and I were talking last night about how much we like Ohana breakfast so I ended up making the whole thing: potatoes, sausage, bacon, biscuits, fruit, and scrambled eggs. It was pretty tasty.

Tonight I am making the shrimp I was supposed to cook yesterday. Maybe a shrimp pot pie.

Maria, thanks for the update on Lauren & Charlene. I miss Charlene around here. I went to my parents today for our Friday feast. My cousin came (she hadn't seen Emma yet) and DM made a Chinese feast. Dim Sum, Spare Ribs, and Chop Suey all from scratch. It was great.

This was the recipe DM used today at lunch...so delicious!

Shrimp and Ginger Siu Mai Dumplings
Recipe courtesy Tyler Florence

Cook Time:40 min
Level: Easy
Yield: 36 dumplings
Ingredients
For the Shrimp Filling:
1 pound shrimp, shelled and deveined
1/2 pound ground pork
1 green onion, finely chopped
3 garlic cloves, minced
1 (2-inch) piece fresh ginger, grated
2 egg whites
2 teaspoons cornstarch
1/2 lemon, juiced
1 tablespoon low-sodium soy sauce, plus some for dipping
1 tablespoon sesame oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
For the Wrappers:
1 (10-ounce) package round wonton wrappers
Canola oil, for brushing the steamer
Savoy cabbage, for lining the steamer, optional
Micro Arugula, for garnish
Directions
Special equipment: wok, bamboo steamer

To make the shrimp filling: Pulse all the ingredients in a food processor until partly smooth but not completely pureed. It should have a little texture. Season with salt and pepper.

To assemble dumplings: Hold a wonton wrapper in your hand. Dip a spoon in cold water and then drop 1 tablespoon of the filling onto the center of a wrapper (dipping the spoon in cold water first will make the filling come off easier). Gather the edges of the wrapper up around the filling and squeeze the sides slightly with your fingers. The sides will naturally pleat, leaving the filling slightly exposed. Tap the dumpling on the table so the bottom is flat and it stands upright. Repeat with the remaining wrappers and filling. (You can freeze the leftover filling for 2 or 3 weeks.)

Lightly oil the bottom of a 10-inch bamboo steamer and line it with the whole cabbage leaves. Stand the dumplings in the steamer in a single layer and don't let them touch. You should be able to get 12 siu mai in the steamer at a time. Bring 1 to 2 inches of water to a boil in a pot. Set the bamboo steamer over the pot, then cover it with the bamboo lid. Steam for 10 to 12 minutes or until the filling feels firm and is cooked through. Serve in the steamer basket and garnish with micro arugula and soy sauce.

I just got an email from my friend. She was diagnosed today - at age 26 - with rheumatoid arthritis. :eek: I've heard of people having arthritis at young ages, but usually it's that juvenile arthritis or whatever it's called, isn't it? I didn't know it was possible to have moderate/high levels of RA at my age! :scared:

I am glad it's Friday. I still like my job and all, but I am ready for this weekend. This was supposedly a short week but it was a little batty. I had to do a fasting blood test this morning and nearly passed out before the test. I feel fine now but it was not the best morning.

I need to finish reading back...I think I missed some posts.

Wow what a few days I have had. Dr. Appt. went great, so great that I don't have to go back for 4 months. YEA!! We slipped and slid the whole way there though. We haven't seen the sun in 6 days now.

I had 2 dear friends pass away. We had a funeral here yesterday morning and another one on Saturday. And of course I am Courtsey Chair for this month - of Course!!

I had to go pick sweet Ethan up from school yesterday. He had a 101 temp with a sore throat. Elizabeth took him to the doctor and he tested positive for the Influenze (not H1N1) and strep throat. Bless his heart.

My Matthew is hurting so bad today. He has had his heart ripped out, stomped on and thrown to the curb. My heart just hurts for him. I just hate it when my kids are upset. This will take awhile to get over.

So needless to say my happy little family could use some good thoughts and prayers. Such is life!!

I am so excited for all of you heading to WDW. Wish I was joining you but life just gets in the way of life sometimes. Have a great time everyone.

My job is so much less exhausting down here! I am actually quite spoiled this year! This week was just so not out of routine with Monday off and I only went to work in the afternoons on Wednesday and Friday that I'm feeling a little "off". Also, I have some fun stuff planned so I'm looking forward to it! :goodvibes

I might get more tired soon though. I signed up to do after school tutoring (yes again...you thought I learned my lesson last year :rotfl:) but this is only about an hour each, two days a week. Last year it was 2 hours/day for 3 days. I'm doing 3rd grade and there should be less than 10 kids in the group; it's test prep for the state test (that I'm not the least bit familiar with....this should be fun! :rotfl2:) I think I'm just doing Math and Reading and not Social Studies or Science. I hope so ... 3rd grade SS is all about Louisiana...I am SO not the expert on that! :lmao:
 
Dinner tonight is our Friday night group; this weeks rotation is a dine-out night. We are headed to Santa Fe Cattle Co., a relatively new restaurant in our area. DH and I haven't been, but the rest of our group has and they say it's really good.

We work alongside a Cambodian community and they still do arranged marriages and you know, the more I get to know these families and couples the more I think they may be onto something :laughing:

Ethan is feeling better this morning. He has been fever free since last night around 8. Slept all night and is raring to go this morning. Elizabeth is having a heck of a time keeping him quiet. :rotfl2: I took them some homemade chicken noodle soup last night and his little eyes looked like he still didn't feel to good. But he is 5 so he has bounced back pretty good today.

Nothing like Nana's soup to make a boy better!

Buddy's tests went faster that he thought. He was scheduled for 6 hours of test but was done in 4.5. He is feeling okay lately and said it was weird, this morning there was almost no pain. He has an appointment with the neurologist on the 29th so unless there is something horrible we won't hear much until then. He does have a followup with his Dr next Monday.

Right now we both are enjoying a glass of wine. i have Welby's Merlot and he is drinking her Blackberry Merlot which I think is disgusting but he loves :rotfl:It is wicked sweet, like a cross between a wine cooler that is not bubbly and sangria.

WE had leftovers tonight. Kady, Marisa and Erica are at Outback with her Meme and her Auntie Janice and her DH. She really wanted Buddy and I to come but we declined. Kady tends to ignore everyone else when Buddy is around so we figured we would skip it and let the girls, They are celebrating her birthday today, she is 8. Tomorrow Marisa is hosting a "kids" party at the movie theater. They are showing Where the Wild Things Are. Funny, Erica Donny and I are also going :lmao:

Oh yes....Buddy made a good cake :lmao:. He said it really was good so I may make it for Jeff's birthday. Next request is a Boston Cream Pie :lmao:
 
one cup flour
one cup sugar
one egg
one stick of melted butter
Mix all ingredients together in bowl


6-8 apples peeled/sliced (I sprinkle with a little cinnamon)
Spray Pyrex dish w/ Pam and place apples on bottom
Spread mixture over top
Bake at 350 for one hour

****This is the simplest dessert. Serve warm with ice cream.

Nancy Can you add seltzer to the blackberry wine? Maybe use some to flavor some fruit for an adult cobbler;)

You guys are not going to believe this, I’m suffering with a gum/toothache, just started an hour ago. Someone must not want me to take this trip but I’m, GOING!!!!!! We’re celebrating our anniversary for the first time in WDW!!!

I'm sorry for your friend. Like Nancy, I don't work, but I like Fridays too. For us, the weekends are much more relaxed than the weekdays, and I enjoy having the kiddos home (most of the time ;)). Sometimes we even have fun activities planned. Tomorrow we are going to the school's fall fair.

Dinner tonight ended up being homemade pizza and Greek salad. Liam and Caili had Greek salad a couple of weeks ago and loved it. They mostly just love the feta.
 
This is my last check in before we leave in the morning. If all goes well, we will be on the road by 7:30. I have everything packed after a great deal of drama involving our luggage carrier. Anyway thanks to Paige and her Dad, all is ok.
