The What's For Dinner Thread - August '09(recipe index in OP)

Is anyone watching Dancing with the Stars this season??? I tuned in last night to watch Donny Osmond perform, and I was happy with him! Have I mentioned that my cousins grew up down the street from the Osmond family (way back when)? Jimmy used to come down the street to play with us. I met Donny a couple of times, and Marie several. Very nice people! I'm rooting for him!!!

Glynis-

As usual not sure about dinner tonight, we have lots of quiche and leftover rotiserrie chicken from Sunday, should probably eat that up.

Nancy, here's the bean recipe. I'll BBL and catch up.

Black Beans

1 lb black beans
1 onion, finely chopped
1T garlic powder
1T chili powder
1tsp cayenne
1tsp cumin
1tsp dried oregano
salt to taste
8 oz ham (cut into bite size chunks)
4 oz chorizo sausage (diced)

Soak the beans overnight. Rinse the beans, place in large pot and cover with water, going about two inches above the beans. Add onion and seasonings. Bring to boil then reduce to simmer for 3-4 hours. After cooking for an hour or two, add meat. Continue cooking until beans are tender to your liking. You may need to add water, depending on “soupy” you want it to be.

I usually season to taste - the measurements above are good starting points. The meat is optional, but I never cook beans without meat.;)

Glynis, prayers for your Dad today. I hope all goes well.

Sheryl, your food looks amazing! The bread and pizza especially. Hmm...I might need to make pizza for dinner tonight.

The concert was amazing, as Laura said. I am tired today though! I have tickets for the So You Think You Can Dance tour tonight, but we are going to skip it. Three nights out is too much.

WFD: either pizza or spaghetti and meatballs.

Cathcing up on some food photos, here is a dinner from the other night. it is fresh corn cakes topped with heirloom tomatoes, goat cheese, and bacon, and an arugula salad.

And here are some popovers that I made the other day:

Laura, Glad you made it through another nite out! Alexis is doing very well, she has had 2 incidents of vomiting. Chris is taking her for her post-op appt. today, we'll see what he says about that.

Glynis, I'm watching! Not all that excited with the cast this year. Looks like I'll be pulling for Donny! Too bad I don't still have the humongous poster of him that graced my walls for several of my teen years!

Vickie, Alexis has excema also. She totally cleared up in the hospital & as soon as she started begging for ice cream it came back. We kind of figured it was the dairy before, but this was proof! When it gets bad we do back off on the milk, but it's hard to deny her ice cream. So far the rash doesn't get that bad.

Lauri, I've only made black beans once with the chorizo & it was delicious! Why did I stop?:confused3 I'll have to do that again soon, sounds yummy.:thumbsup2

Glynis- Thinking of you and your dad, I hope you get good news soon. I do a lot of baking when I'm nervous too.

I had no idea dairy and excema were related, but I can't imagine a life without ice cream or cheese. I think I'd rather the rash.

Sheryl- Sometimes I bake italian bread dough with chunks of cheese and chorizo in it, it's so good. I like it on pizza too.

Becky and Laura- Sleep good tonight!

I don't know what's for dinner. I'm thinking chicken ceaser salad, but the recipe calls for greek yogurt and I've never used it before. Maybe I'll make it for lunch so the peanut gallery doesn't grumble to much. We (I) really need to start making lighter meals.

Becky, Amazing?! Woowee that's high praise coming from you! Thanks, but now I might hurt myself now patting myself on the back!

I should have listened to you and tried that No Knead bread ages ago! I didn't because I don't own a cast-iron pot. But checking out breadtopia site I saw that I could use my ceramic glazed pot. It was easy & came out perfect!

Those corn cakes look sooo good they must have been yummielicious!!! Have you posted a recipe for those? The popovers look great too!

I need to eat lighter meals too & now I'm dreaming of bread with cheese & chorizo in it!!! :cloud9: oooooooh it sounds heavenly!

Glynis--lots of prayers and good thoughts coming your way for your dad. Update us as soon as you can.

Sheryl--I meant to say yesterday that I, too, and so glad to see Alexis smiling! Hope her post-op appt. goes well today. Yummy bread!

Vickie--LOL I have tips too! Maybe I'll just get the ends cut off and save the money on the color! DD had bad eczema too when she was a baby. Hope your DS can get some relief. Besides the Aquaphor we also used Eucerin cream (made by the same company) and Unscented Dove soap. Worked wonders for her!

Not sure WFD tonight. It's mom's turn again--probably pasta of some sort. Time for me to get ready for work! Have a great Tuesday!

Lauri U - That's interesting that you cook black beans the same as red & white beans, I may have to try that. When I do black beans I tend to go the "cuban" way with cumin, oregano & vinegar.

We put a little cuban/spanish spin on ours. The first time I had black beans was in 94 or 95 on a dive trip to Roatan, Honduras. The resort had them every day for lunch with sandwiches and other food.

The concert was amazing, as Laura said. I am tired today though! I have tickets for the So You Think You Can Dance tour tonight, but we are going to skip it. Three nights out is too much.

I wish that tour was coming closer to us. I'd love to see it but don't want to travel 6 hours or more to do so.

Those corn cakes look really good.

We watched it for the first time last night; I wanted to see Mark Descausas (sp) from Iron Chef and Bob wanted to see Chuck Liddell. Donny did a really good job. That's neat that you actually met him. I was a BIG fan in my younger days; the first concert I ever went to was an Osmond Brothers concert!

Sheryl - we got hooked on chorizo at the F&W we did in 2007; one of the booths had a potato & chorizo dish that we both loved.

Now that sounds really delicious! And I know what you mean about cooking lighter!!

WFD - meatball po-boys

Lauri- thanks for the Black bean recipe, it looks terrific! I am craving comfort food lately and while it is so not on my diet I really want it!

Becky- I am drooling over those corn cakes, and now I also want the bread.

Sheryl- your food porn is always gorgeous! I have to tell you that the pic of Alexis was my favorite though :cloud9: I would not be able to deny her the ice cream either. Kady got a bit carried away with the goodies once she was able to have them so Marisa told her she could have 1 snack a day, her choice when and what. Her Pa, (who was pointing out that she was getting round, BTW), is appalled that she cannot have her ice cream, doughnuts and treats whenever he offers them :lmao:

Robin- I love Greek yogurt! I found a recipe to make my own but it looks time consuming. It looks easy and very inexpensive though so I may give it a try.

Glynis- Waiting to hear how your Dad is. How is the baby today? and Allan?

Laura- I would be napping right about now!

Welby just called and she is out for the week with strep throat. I am so glad I took that antibiotic, I am way better today! The baby is totally fine and was bellowing at her all day yesterday. They stopped in and she was on fire!

I have two banana breads in the oven right now. They look more like banana cakes so we'll see how they are. If they are good I'll post the recipe.

Stephanie, I wanted to say Thanks!... for mentioning sudafed! When you mentioned it, I realized I hadn't taken sudafed in a while. After a few days of sudafed & mucinex my sinuses are feeling much better!:thumbsup2

Alexis's skin burns so much that the rx cream the dr gave her hurt. Eucerin sometimes bothers her too. I've found what works best for her, is Baby Oil right after getting out of the tub. I'll have to try the unscented dove soap! Thanks again.:goodvibes

Evening, everyone! I'm here with my hands out begging for whatever prayers, pixie dust, good thoughts, etc., that you can send my way.

My dad went through prostate cancer 12 years ago, had it removed and has been fine, since. However, this past week, he noticed a swelling, and went to the doctor. The doctor thought it could be an infection so put dad on an antibiotic. That didn't do anything, so after some further tests, they have determined it is cancer. However they are not sure where the cancer is situated. He has a CAT scan scheduled for tomorrow to see what exactly is going on, and then they will be able to determine a course of action. The doctor is fairly sure that they've caught it early, and will be able to take care of it relatively easily. However, I'm terrified! I'm still not over losing mom, and I just don't think I can handle losing dad!

Thanks for letting me get this out, and for any prayers, etc., you can give!

Prayers are on the way my friend. Please let us know how things are. We will always be here for you!!

Nancy ~ Your soups so delicious. I love soup and the weather is cooling so it is almost time.

Kathy ~ you are so welcome.

Stephanie ~ I hope your allergies are better today.

Sheryl ~ your bread looked amazing. I love to bake bread. Mine was good last night. Didn't look as good as yours but it tasted ok.

It is raining here today. It started yesterday about 4 and has rained ever since. Not like they are getting in Atlanta but even so it is really drearey. And the farmers are NOT happy. This is going to make it Christmas before we get the crops dry enough to harvest. It is supposed to rain off and on until Thursday.

WFDT ~ Chicken Kabobs, buttered & parsley noodles and an aspic salad.

Make it a great day everyone.

Laura & Becky – Glad you both enjoyed the concerts, I’d be like the walking dead if I’d gone out 2 nights in a row….ahhhh to be young again.;)

Glynis – I watched DWTS last night and will tune in tonight but this group is not exciting me at all. I love Donny and the Iron Chef guy has potential but there are so many other programs on TV I may not stick with DWTS this season.

Lauri U – I’ve never thought of chorizo in black beans, got to remember that!!!!!:thumbsup2

Sheryl - I’m hoping Alexis’ post op appt goes well today.:goodvibes

Nancy – Glad to hear you’re feeling better. I love the way banana bread makes the house smell.:cloud9:

It certainly doesn't feel like the first day of fall down here, hot, sticky, humid and raining.

Buddy's Dr told him not to use anything but Dove soup so for the past thre years that is all I have in the house. I do buy the scented bars but I have not had dry skin since.

That is not good. The weather has been so unkind to farmers this year :sad2:. I have no idea how some are surviving. Have you checked your shelves for pumpkin lately? There is none.

My house does smell good! I think I like this one. I tried it before it cooled so after dinner I will have a little more and then post it if the flavor develops. The banana is subtle, I am just not sure about the density, it called for 2 sticks of butter and 1 1/2 cps of sour cream :dance3:

Dinner is smothered pork chops, mashed white sweet potatoes and a green salad.

Hey all! Quick fly by to let you know that I am alive! Been working in the kitchen most of the day to get in all ready to stage...which translates to hardly anything on the counters so I had to clean the pantry to make room for it all.

Mom is doing good. She is keeping to herself which I guess is good for me...its almost cocktail hour so we'll have a drink!

Tom had a farewell lunch and then a dinner tonight and then happy hour tomorrow...I guess they liked him there. Oh well! Dinner here will be "roasted" chicken in the crockpot. I love it like this but wish the skin got crispy. It smells so freakin good! Sides will be stove top, mashed taters, green beans and cranberry sauce. This is my all time favorite meal!

OK, off to go feed the little one!

Hope everyone is well!

Has you DH considered cutting out Dairy foods ?

We were told by a Doctor to try this when the boy was a toddler and the result were amazing.

His skin is clear unless as I said he gets emotional.

I spoke to a mum at a party last week and she cut dairy from her two kids diet and she has witnessed the same effect.

Maybe worth a try !! :confused3

He has not tried that... but I don't think he'll give up his cheese and ice cream  I'll ask him and see what his response is. I'm so glad it's working for your boy!!

We watched... but I'm not taken with anyone so far. It's a time sucker, esp when so many other great shows are on, so it may get cut from the DVR. I need more space!

Welby just called and she is out for the week with strep throat. I am so glad I took that antibiotic, I am way better today! The baby is totally fine and was bellowing at her all day yesterday. They stopped in and she was on fire!

I'm sorry she's sick now, too!

I spent the day out of town at a meeting ~ it's with dear friends so it's a good way to spend a rainy yucky day. Fall has arrived in TX - it's only about 72 outside! I may actually put out my fall decor tonight.

We are having jambalaya (shrimp/chicken/sausage), and I'm making cheddar bay biscuits - knock off from Red Lobster.

Tonight will probably be just a salad for me since Alex will be by his dad. Alex is pretty grubbly tonight I am glad he won't be grubbly here insert evil laugh:laughing: I hope this means he is just tired and not getting sick. Alex is alot like me we don't enjoy being sick and it just make us grumpy.

Well back to that darned Farm game. Plus I have house work to do be for tv tonight.

Nancy -2 sticks of butter and 1 1/2 cps of sour cream….:scared1: I'd think it would be very dense, but I don't really know a lot about baking.

Lauren – Hope you & Mom had a nice happy hour and dinner!!! Wow, Tom’s company is really going all out for his send-off. He must have been a very valuable asset to them!:thumbsup2

Aimee – I’m glad y’all are feeling fall, hopefully we will be soon.:rolleyes1

Janice – Keeping my fingers crossed that Alex isn’t getting sick.

I really LOVE Hell’s Kitchen and I’m having to tape that to watch DWTS. Not sure how much longer I’ll stick with DWTS.

Have a great night all!

I feel the same way, Kathy! I will probably tune in on the results nights only, just to see how Donny is doing. And that will be that! It's amazing to think that he's a grandfather! He certainly doesn't look it! I hope I look that good when I'm a grandmother!
